This Pumpkin Cream Cold Brew Coffee is a close copy cat of the Starbucks iced coffee recipe, and it&#x27;s so perfect for fall. Bonus: it&#x27;s got real pumpkin in it!

Pumpkin Cream Cold Brew

filtered water

vanilla syrup (see below)

pumpkin cream (see below)

Pumpkin spice, for garnishing (see below)

whipping cream

tsp pumpkin spice mix

Make the cold brew coffee by mixing water and coffee grinds together in a large pitcher. Let sit overnight in the fridge for at least 12 hours (or up to 48 hours if desired).

When ready to serve, slowly pour coffee through cheesecloth that is sitting in a fine mesh sieve into another large pitcher. Make sure you pour slowly and with precision to ensure there are no coffee grounds in the cold brew.

Cold brew coffee

Add one cup boiling water and 1 cup sugar to a mason jar, stirring well. Stir in vanilla, then let cool to room temperature. Store in the fridge up to 2 months.

Vanilla syrup

Mix all ingredients together for spice mix and store in an airtight container until ready to use. Will last for 3 months.

Pumpkin spice mix

Mix all ingredients together well in a large mixing cup. If you&#x27;d like the frothy texture, use an immersion blender or milk frother to mix up ingredients - if choosing this method, be sure to add to your cold brew ASAP!

Pumpkin cream

Add a handful of ice to a large glass or mason jar, then mix in 2 tbsp of vanilla syrup. Top with 2 cups of coffee, then add 1/4 cup of pumpkin cream on top. Before mixing, sprinkle with pumpkin spice mix. Serve and enjoy!

These pumpkin brownies are my favorite fudgy brownie recipe sandwiched around a perfectly spiced pumpkin cream layer. The perfect fall treat for all my chocolate lovers. 

Pumpkin Brownies

(113 grams) salted butter (gets melted)

(4 ounces) semi-sweet chocolate chips ((or dark))

(67 grams) C&H® Light Brown Sugar (lightly packed)

eggs (room temperature)

tsp vanilla extract

(26 grams) Dutch-process cocoa powder (spooned and leveled)

(60 grams) all-purpose flour (spooned and leveled)

tsp fine sea salt

(1 brick) cream cheese (softened)

nutmeg

ginger

cloves

tsp allspice

sea salt flakes (for topping)

Preheat the oven to 325F/163C and grease and line an 8×8” pan with baking spray and parchment paper (leaving an overhang to easily remove them).

Place the butter and chocolate in another medium, heat proof bowl and microwave for 1 minute, remove and stir until the chocolate and butter is melted and combined.

In a large bowl, place the C&H® Premium Pure Cane Granulated Sugar Easy Baking Tub, C&H® Light Brown Sugar, eggs and vanilla. Whisk them together aggressively for 1-2 minutes, until the mixture is completely smooth.

Add in the cocoa powder and whisk again for another 1-2 minutes, until it’s completely smooth.

Add in the melted chocolate and butter and whisk until the mixture is fully combined.

Add in the flour and salt and whisk just until there’s only a few streaks of flour left.

Spread half of the brownie batter into the prepared pan and set aside.

Brownie Layer

In a small or medium bowl, whisk together the softened cream cheese with the pumpkin puree, C&H® Premium Pure Cane Granulated Sugar Easy Baking Tub and spice, until they’re combined and smooth (you can microwave it for 20 second intervals if your cream cheese wasn’t soft enough or it’s not combining easily).

Spread the pumpkin filling on top, followed by the other half of the brownie batter (microwave for 15-30 seconds if it’s not spreadable anymore).

You can leave it as is or swirl them together a little with a knife or a toothpick for a design. Bake for 50 minutes. The top should be thin and crackly and puffed in the center.

Tap it against the counter a couple of times, it should deflate a little but not be jiggly at all. When you press on it, it should feel soft underneath but not runny/liquid-y.

Top with a pinch of sea salt flakes and allow to cool in the pan for 30-60 minutes. Refrigerator for 30-60 minutes or so before slicing.

Pumpkin Cheesecake Layer

I accidentally used rice flour instead of regular flour but still turned out delicious (though crumbly due to my mistake)! Definitely takes longer than your classic brownies but that’s no problem. Not overly sweet and the pumpkin layer makes it so yummy. Got a great brownie crust on top too :)
