Crisp and tangy, quick pickled vegetables are so easy to make. Enjoy them as an irresistible (but healthy!) snack, side, or relish.

Pickled Vegetables - spicy or not!

Divide the vegetables, spices, and vinegar (3/4 cup in each jar) evenly between 2 one quart jars. Fill with boiling water. Place the lids on the jars and give a little shake.

Let cool at room temperature for one hour; then refrigerate up to one month. Pickles are ready to consume after about 6 hours but are best after a day or two.

NO SUGAR Quick Pickled Vegetables

tbsp. Mustard seeds, yellow

tbsp. Allspice berries

tbsp. Dill seeds (1 tbsp of dry dill can be substituted)

Coriander seeds

Red pepper flakes

Whole cloves

Vegetables,

Water

Vinegar (Plain white vinegar

tbsp. salt, you will need 2 tablespoons.)

tbsp. Basic pickling spice mix

Mix all the spices together and store in an air-tight jar.  Your mix will stay fresh for at least one year. (You will only need to use 2 tbsps of this pickling spice mix for this recipe.)

Basic Pickling Spice Mix

Fill your jar(s) with vegetables and pack tightly, leaving a 1/2 inch headspace from the rim of the jar(s). Set aside.

In a medium saucepan, mix water, vinegar, salt, and pickling spice together.  This is your brine.  Bring your brine to a boil and then turn the heat down to medium and simmer for 10 minutes.

After the 10 minute simmer, begin to carefully ladle the brine into the jar(s).  Be sure to cover the vegetables completely, leaving a 1/2 inch headspace from the rim of the jar.

Some of the pickling spice mix may accumulate on top of the vegetables as you ladle in the brine.  As the hot brine begins to soften the vegetables, the pickling spices will slowly work their way throughout the jar(s).

Allow the vegetables in the brine to cool slightly and then put the lid(s) on the jar(s) and refrigerate.  Your quick pickled vegetables should be ready to eat within one hour.

First, prepare all of the vegetables by thinly slicing them. For the daikon, cucumber, and carrot it works best to use a julienne peeler to peel long thin strips. For the red onion and jalapeno, use a sharp knife to slice thin strips of each.

Then, add the prepared vegetables to a jar....

Then, add the prepared vegetables to a jar. It can be a jar large enough to fit all of the vegetables or they can be divded between two jars if necessary. Make sure that the vegetables are packed tightly.

Combine the sugar, water, rice vinegar, and kosher...

Combine the sugar, water, rice vinegar, and kosher salt in a small saucepan. Taste when the sugar and salt have dissolved, before the mixture boils and is too hot to the touch (take care not to burn your mouth). Add additional salt or sugar if desired.

Heat the mixture to boiling over medium high...

Heat the mixture to boiling over medium high heat. Then, remove from heat.

Pour the pickling brine over the vegetables.

Cool the mixture to room temperature, then seal the jar with the lid and transfer to the refrigerator. Chill for at least 2 hours before serving to ensure the best flavor.

Asian Pickled Vegetables

These easy and delicious Asian Quick Pickled Cucumbers are ready in 5 minutes, and make a great cooling side dish in summer! (I show you how to make 2 versions: 1 that can be immediately after tossing in the brine (the 5-min recipe) and a 2nd that has a milder flavor and needs to pickle for 15- 30 minutes.)

Asian Quick Pickled Cucumbers (5-min)

Cup white rice vinegar

⅓ Cup white sugar, minimum

salt (substitute with soy sauce

onions, carrots, radish, chilies, scallions etc (optional)

Wash the cucumbers, paying attention to the stem area. Remove the blossoms, as these contain enzymes that make your pickle soft then slice as thinly as possible. The thinner the slices, the quicker the pickle.

Slice the cucumbers and other ingredients you&#39;re using (e.g. shallots) as thinly as possible. (See Tips for how to make them extra crunchy.)

Mix the brine ingredients in a glass jar, with an airtight seal, such as a Mason Jar. Close tightly then shake till everything is mixed and the sugar is dissolved. 

Add the cucumbers and veg to the brine. You can enjoy the Asian Quick Pickles straight away. Alternatively, if you diluted the brine with water, you can leave for 15-30 minutes at room temperature or overnight in the fridge for more flavor.
