Lemon Quinoa with fresh herbs is a healthy gluten free side that is taken up a notch by a mix of sauteed shallots, bright lemon, parsley, thyme and spinach. If you like, this is an excellent quinoa salad.

Herbed Lemon Quinoa with Spinach

quinoa

chicken low-sodium broth

salt and black pepper (to taste)

olive oil

shallots

lemon

Italian parsley

baby spinach sliced

thyme (fresh)

red pepper

In a fine sieve rinse quinoa in cold water.

Bring 2 3/4 cups chicken broth to a boil in a 2-qt. saucepan. Stir in quinoa, salt, and pepper; reduce heat to low. Cook, covered, until liquid is absorbed, about 25 minutes. Remove from heat; let sit 5 minutes; uncover and fluff with fork; keep warm.

Heat oil in a large non-stick skillet over medium heat; add shallots and cook, stirring occasionally, until soft and golden, about 10 minutes. Stir in zest and juice and simmer for 1 minute; remove from heat. Add the quinoa, baby spinach, thyme, parsley and stir until thoroughly combined. Serve warm or at room temperature.

Really enjoyed this recipe "as is".  The lemon rind/juice was a nice addition.  Always love anything with spinach and fresh herbs.  I will definitely be making this again....at least 1-2x/month on our NON-MEAT meals....which we try to incorporate 3-4 days per week.  My husband thought it was very tasty as well - he added some of the crumbled feta on his!!!!  Thank you for this wonderful "full of protein" recipe...

Ok, so I don't prepare quinoa very often. I love couscous, and prepare it the same way that you prepare your quinoa side dishes. 
This recipe sounds so yummy though  . . . and I know that the health benefits are great. 
I think I might need to pick up a bag from TJ's tomorrow, and give this recipe a try. 
I've been loving asparagus lately, so I think I might need to add a little of that too :0)

An easy way to make a quick risotto. The orzo pasta makes this dish super creamy and the spinach and seasonings make it a great side for any meal.&nbsp;

Lemon Spinach Orzo Pasta A Quick Risotto

onion

garlic

dry orzo pasta

chicken broth (hot)

water (hot)

baby spinach

Tbsp. minced lemon zest

unsalted butter

black pepper

nutmeg

sauté onion in olive oil in a saucepan over medium-high heat until softened, 3-5 minutes, Add garlic; cook until fragrant, 1 minute.

Add orzo and stir to coat with oil; cook 1-2 minutes. Stir in broth and water, stirring often until liquid is absorbed and orzo is cooked, 9-10 minutes.

Off heat, stir in spinach, zest, butter, salt, pepper, and nutmeg until spinach wilts.

Delicious!!!  So easy and fresh....nice compliment to seafood!
