Chunky Tomato Soup

tbs vegetable oil

onion

garlic

tbs flour

milk

oz petite diced tomatoes (1 large can, don't drain)

oz crushed tomatoes (1 large can, don't drain)

basil

oregano

oz chicken stock or vegetable stock

white bread cubes

olive oil

Parmesan cheese

In a large saucepan, heat oil over medium heat. Add onion and garlic; cook until soft. Add flour; cook and stir until moist. Gradually add milk, cooking and stirring about 2 minutes or until smooth and bubbly

Stir in crushed and petite diced tomatoes, basil, oregano and stock. Cover and cook on medium heat for 15 minutes. Stir frequently and do not allow mixture to boil.

To make croutons, toss bread cubes with olive oil and grated cheese. Spread onto baking sheet and place into a preheated oven at 350F/180C. Bake until croutons are golden brown, about 10 minutes. Top soup with crouton.

3-Ingredient Tomato Soup from Canned Tomatoes

1½ Tbsp butter ((or oil))

yellow onion, rough chopped ((or ½ large onion))

oz canned crushed tomatoes ((or canned whole peeled tomatoes))

vegetable broth ((or chicken broth,

¼ tsp salt,

basil leaves

croutons or pita chips

shaved parmesan

Melt butter (or heat oil) in a pot over medium-high heat. Add chopped onion and saute 4-5 minutes, until softened.

Add crushed tomatoes and broth, stirring to combine. If desired, season to taste with salt (depending on how salty your broth is).

Bring to a boil, then turn down the heat and simmer for 15-20 minutes. Allow to cool slightly before transferring to a blender.

Puree soup in a blender or with an immersion blender. (If desired, blend with fresh basil to make a tomato basil soup.) Be careful as to not burn yourself!

Serve with croutons, fresh basil, parmesan, or whatever you like!

Once soup cools completely, store in an airtight container in the fridge for 4-5 days or freeze for 3-4 months.

Yields~5 cups of homemade tomato soup.

The easiest-ever 3-ingredient homemade tomato soup + how to make the perfect grilled cheese! This is one of my FAVORITE lightened-up weeknight dinners that’s both nourishing & comforting, and quick enough to make in 30 minutes. 

First I’m sharing how to make tomato soup with canned tomatoes—which is way simpler (and often tastier!) than using fresh tomatoes. Just simmer those crushed tomatoes with sautéed onion and broth, then blend!

And I like to serve that easy, creamy tomato soup with my ULTIMATE 3-cheese grilled cheese sandwich: with cheddar, Gruyère, and Swiss cheese on brioche bread! Of course, you can use more or less of whatever cheeses you want to make YOUR ultimate grilled cheese.
