Quinoa upma is a nutritious upma variety made with quinoa and mixed veggies

Quinoa Upma

quinoa

medium onion (or 1/3 cup finely chopped medium onion)

ginger

chilies

dry red chili (- stem removed)

asafoetida ((hing) - optional)

urad dal

moong dal (or chana dal)

coriander leaves ((cilantro leaves))

Take ½ cup quinoa in a fine strainer and rinse well in running water.

Heat 1.5 tbsp oil in a pan. Add ½ tsp mustard seeds.

Once the mustard seeds begin crackling, then add ½ tsp cumin seeds, ½ tsp urad dal and ½ tsp moong dal or chana dal.

Stir and saute on a low flame. Saute till the urad dal and moong dal turn golden.

Then add ½ tsp finely chopped ginger, 1 tsp chopped green chilies or 1 to 2 green chilies, chopped, 1 dry red chili and a pinch of asafoetida (optional). Saute for about half a minute.

Next add 1/3 cup finely chopped medium onion and 5 to 6 curry leaves.

Stir and saute on a low to medium flame.

Saute till the onions become translucent.

Then add 1/3 cup finely chopped carrots, 1/4 cup finely chopped french beans and 1/3 cup frozen peas. Mix well.

Saute on a low flame for two minutes.

Then add the quinoa. Mix very well again.

Saute for a minute or two on low flame.

Then add water. For 1/2 cup of quinoa 1 cup of water can be added. I added 1.25 cups water as I wanted a more fluffy and softer texture.

Stir well. Add salt as per taste.

Cover the pan with its lid and simmer on a low flame till the quinoa seeds are cooked.

Once or twice you can stir the upma while its being simmered.

When all the water has been absorbed and the grains appear translucent and cooked well, remove the lid and switch off the flame.

Add 2 tbsp chopped coriander leaves.

Give a quick stir and serve vegetable quinoa upma hot or warm with a few lemon wedges or coconut chutney or lime pickle.

Rinse quinoa very well in a pot. Or add it to a strainer and rinse under running water rubbing well.&nbsp;

Drain water completely &amp; set aside.

Rinse and chop the ginger, carrots, beans and onion (optional).

Preparation

Heat oil in a pan and add mustard seeds. When the seeds splutter, add dals, cashews and fry until golden.&nbsp;

Then add curry leaves, green chilies and onions.&nbsp;

Fry for 2 minutes and then add the mixed veggies &amp; ginger.&nbsp;

Mix and fry for a minute. Transfer the drained quinoa.&nbsp;

Pour water and add salt. Mix and taste the water. If needed add more salt.

Cook on a medium flame until quinoa turns tender and absorbs all the water.

If there is more water left, cook for longer and evaporate. When quinoa is completely cooked they look transparent.

Serve quinoa upma with podi, pickle, lemon wedges or curd.

Making quinoa upma

Press saute button and pour oil to the inner pot of the Instant pot.

When the oil turns slightly hot, add mustard, chana dal, urad dal &amp; cashews.

Fry them until slightly golden. Then add in curry leaves, onions and green chili.

Saute the onions until transparent. Then add in ginger, veggies, turmeric &amp; drained quinoa.

Next saute everything for about 1 to 2 mins. Then pour water and add salt.

Press CANCEL button and Deglaze the pot by scrubbing the bottom with a spatula to release any bits of food stuck.

Taste the water and add more salt if needed.

Secure the lid of the instant pot. Position the steam release handle to sealing.

Press PRESSURE COOK button &amp; Set the timer to 1 minute.

It takes time for the pot to build up pressure and cook. Once the pressure builds up, it cooks for a minute.

When it is done cooking the ip beeps and goes to keep warm. Then press cancel and wait for the pressure to release manually.

When the pin drops, open the lid and fluff up the quinoa upma.

Sprinkle some lemon juice and serve hot.
