Easy ramen bowls at home made with whatever vegetable you have in the fridge. This soup comes together in one pot and is filled with asian flavors like ginger, garlic and soy sauce.&nbsp;

Easy Homemade Healthy Ramen Bowl

tablespoons olive oil

cup shredded carrots

cups thinly sliced mushrooms

garlic cloves, minced

thumb of ginger, grated

teaspoons sesame oil

chicken broth

soy sauce

of sriracha (more if you like it spicy)

kale

jalapeno, thinly sliced

cup green onions, thinly sliced

eggs, soft boiled

In a large dutch oven or stock pot heat olive oil on medium heat.

Add in carrots and mushrooms and cook for 3-4 minutes or until tender. Add in minced garlic and ginger and sesame oil and cook for 1-2 minutes or until fragrant.

Add in broth, soy sauce, and sriracha and bring broth to a slow simmer. Taste test broth and add in more soy sauce or sriracha to your liking. Stir in kale and cook for 1-2 minutes or until wilted. Add dried ramen packages to simmering broth and cook for 2-3 minutes.

Top soup bowls off with thinly sliced jalapeños, sesame seeds, green onions and soft boiled eggs.

Bring a small sauce pot of water to a rolling boil. Add in 2-3 eggs and boil for (5) minutes (be sure to set a timer!).

Once eggs are finished cooking, immediately transfer them to a bowl filled with half ice/half water to cool down instantly and stop cooking. Let cool for 2-3 minutes and very gently peel and half eggs for soup.

Wow this recipe was absolutely incredible. I used powered ginger package from Trader Joes because they didn't have real ginger. I doubled the recipe and included 3 packets of the ginger. I also used about 7 packets of rice ramen from Costco. I'm a big fan of ramen, it's hard to find a really good ramen at a restaurant. This is the best ramen I've ever had. I obsessed over it. Thought I was overreacting but my boyfriend agreed. So good.

So good and the directions were very easy to follow. I added bok choy and some shallots. I will double the recipe next time so I have for lunch. Can’t wait to mKe this again.

I have never made any ramen at home before but this was very easy and came out tasty.  Since the recipe moves along quickly, definitely have all of your cutting and measuring done ahead of time and it should be a piece of cake! :-)

I hate kale. Except for in this recipe!
This is really good and pretty easy. I double the recipe, using 1 tsp of ground ginger in place of the thumb (x2 if you double it) and omit the jalapeno slices and runny eggs.  Before I add the Ramen, I turn off the pot, let it cool, and then portion it out into 2 cup containers. I put the containers in the freezer and when I want to have this soup dump it out into a pan, heat it to a simmer, throw in half a pack of ramen (I put the other have in a zippy bag for next time) and a squirt of siracha. On the days I work from home, this is my go to lunch. Thank you for sharing this!

Even though I love pork belly ramen, I'm not crazy about soggy pork belly. I want it to be crispy on the edges! In this pork belly ramen recipe, I use homemade ramen noodles (optional), and my super simple Oven Roasted Crispy Pork Belly that's crisped up just before adding to the soup. The broth is delicate with hints of ginger, soy sauce and sesame oil and soft cooked eggs. For flavor, texture, and to make the soup more nutritious, I add some baby bok choy and garnish with fresh cilantro, green onions and Thai basil. Then a bit of sriracha for kick! It's the perfect bowl of ramen!

eggs (cooked to your desired doneness, halved)

sriracha (as desired)

green onions (chopped, as desired)

cilantro (chopped, as desired)

Thai Basil (chopped, as desired)

Bring chicken stock to boil.

Meanwhile, slice Oven Roasted Crispy Pork Belly (or other cooked pork belly) into 1/8-inch lengthwise slices. Place in a skillet over medium heat and fry until edges are crisp, about 5 minutes. Remove from skillet to a paper towel to drain.

Add ramen noodles to boiling broth and cook one minute (longer if you're using dried ramen noodles). After one minute add bok choy and ginger; bring to boil and cook one minute more. Remove from heat and stir in soy sauce and sesame oil.&nbsp;

Divide ramen between 4 bowls. Top each with two egg halves, 1/4 of pork belly and desired amounts of sriracha, green onions, cilantro and basil. Serve.

I enjoyed making this. The crispy ramen was the best part. I don’t know where to add the seasoning packets either? I just discarded them. You don’t need to add it anyway too much sodium in those seasoning packets. The dressing was perfectly balanced and the cabbage give it the perfect crunch

Chicken Ramen Skillet

garlic,

red bell pepper,

broccoli florets, diced

lb boneless skinless chicken breast, chopped into bite-sized pieces

cornstarch

brown sugar

rice vinegar

hoisin sauce

Sriracha sauce,

Green onion, sliced

Prepare ramen (without seasoning packets) according to package instructions. Drain, toss with 1 tablespoon oil, then set aside.

In a small bowl, whisk together the sauce ingredients: the cornstarch, soy sauce, chicken broth, sesame oil, rice vinegar, hoisin sauce, Sriracha, and black pepper. Set aside.

In a large skillet or wok, heat 2 tablespoons of the olive oil over medium-high heat. Add garlic and ginger and cook until fragrant, about 1 minute.

Add onion, broccoli, bell pepper, carrots, and mushrooms and cook until just tender 4-5 minutes.

Push vegetables to one side, then add 1 tablespoon oil to empty side, followed by chicken. Season with salt and pepper and cook until no longer pink, 3-4 minutes.

Stir sauce once more time, then add to skillet along with drained ramen noodles. Cook and toss everything together with tongs until sauce has thickened and coated everything, 2-4 minutes.

Serve topped with green onion and sesame seeds and enjoy!
