Crispy Ranch Air Fryer Potatoes

lb potatoes ((skin on))

olive oil

chives ((dried))

tsp parsley ((dried))

onion powder

Cut your potatoes to the desired size. There is no need to peel them unless you prefer that.

Combine the potatoes, olive oil, and seasonings in a mixing bowl, tossing to coat.

Preheat the air fryer to 400 degrees F for 2 minutes.

Spray the inside of the air fryer with olive oil and add potatoes. Cook for 15 minutes and then shake the basket to mix the potatoes around.

Cook for an additional 10-15 minutes or until they have reached your desired level of crispy.

Preheat oven to 400°F.

Boil the potatoes in a large pot of water over high heat until fork tender. Drain the water from the pot and transfer the potatoes to a 2-quart baking dish. Season the potatoes with salt and pepper to taste.

In a medium mixing bowl, combine the ranch dressing, sour cream, garlic powder, onion powder, paprika, and 1 cup of the cheese. Pour the mixture all over the potatoes in the baking dish and toss lightly to coat the potatoes.

Bake uncovered at 400°F for 15 minutes.

Remove the casserole from oven and top with the remaining cheese and bacon. Return the dish to the oven and bake for 5-7 minutes, until cheese is melted. Top with the chopped green onion and serve hot.

This is my secret to the perfect instant pot potatoes: Steam them for a few minutes on a steamer rack or trivet (vs submerging them in water), then drain and lightly sauté them in butter and herbs for the ultimate flavor. Pressure cook: Place 1 cup water in the inner pot of your instant pot. Set a trivet or steamer basket in the inner pot and place the potatoes on top. Close the lid, set the valve to &quot;sealing&quot; and select &quot;pressure cook&quot; (or &quot;manual&quot; on some models). Set the timer to 3 minutes. It will take about 5 minutes for the instant pot to come to pressure, then the timer will start counting down.

Release pressure: Once the cooking time is up, do a 5 minute pressure release (just switch off the instant pot and leave it alone). Then, release any remaining pressure manually according to manufacturer&#x27;s instructions.

Drain: Drain the potatoes and remove the trivet. Rinse the inner pot in hot water to remove any starch residue (no need to scrub it, just rinse it once), then place the potatoes back in and fit it into the instant pot.

Sauté: Set the instant pot to &quot;sauté&quot; and add the butter and seasoning mix. Toss well to evenly coat the potatoes with butter, then brown until the potatoes are lightly crispy - watch closely so they don&#x27;t burn, then serve immediately.

baby red potatoes (quartered)

panko Japanese-style breadcrumbs

parmesan cheese (finely grated)

parsley (optional for garnishing)

Preheat oven to 475F (use convection if you have it), line a half-sheet pan with foil if desired for easier cleanup, add the potatoes, evenly drizzle with olive oil, toss with your hands to combine, and flip all potatoes so the cut-side is down.

Add the onion wedges, evenly spaced throughout the potatoes. Tip - Do not cut these smaller than a 1-inch thick wedge or they will be prone to burning. Try to keep them in a 'stack' of onions rather than individual onion pieces which will also be prone to burning. Evenly drizzle each each onion stack with a touch of olive oil.

Evenly sprinkle 2/3 of the packet of seasoning mix over the potatoes and onions. It looks like a lot but it's fine.

Evenly season with pepper.

Roast for about 25 minutes, or until the potatoes are beginning to turn lightly golden brown on the cut-side-down sides.

Flip all the potatoes and onions, evenly drizzle with a bit more olive oil if things look at all dry, return to the oven, and roast for about 7 more minutes.

While the potatoes and onions finish roasting, add the butter to a small skillet and heat over medium-high heat to melt.

Stir in the panko and the remaining 1/3 packet of ranch mix.

Remove the sheet pan from the oven, and evenly spoon the panko mixture over the potatoes and onions.

Return sheet pan and roast for an additional 7 minutes, or until lightly golden browned on top. Keep a very close eye on things at this point so you don't burn the topping. Start checking very closely after 5 minutes.

Evenly sprinkle with Parmesan, optional parsley, and serve immediately.
