Both quick, simple and easy, Shannon Bennett's Welsh rarebit is the ultimate revamp on the fan favourite, the cheese toastie.

Shannon Bennett's Welsh rarebit

sourdough

unsalted butter

(100 grams) plain flour

(500 milliliters) apple cider

mature cheddar cheese, grated

gruyere cheese, grated

tbs chopped flat-leaf parsley leaves

Worcestershire sauce

eggs, egg

Dijon mustard

(60 milliliters) extra virgin olive oil

lemon

This recipe keeps all of the flavours of Welsh Rarebit, but is much lighter and slimming friendly!

Mushroom and Rarebit Muffins | Slimming &amp; Weight Watchers Friendly

wholemeal English muffins

g mushrooms (finely sliced)

g reduced fat mature Cheddar cheese

spring onion (chopped)

tbsp Henderson's Relish (or Worcestershire sauce)

mustard powder

low calorie cooking spray

black pepper

Spray

Spray the frying pan with low calorie cooking spray and sauté the mushrooms and spring onion for 2-3 minutes until soft. Place in a bowl.

Pre-heat

Allow

Allow the mushrooms to cool slightly, then add the grated cheese, mustard powder, Henderson&#039;s relish and egg yolk. Add a little freshly ground black pepper to taste.

Slice

Slice the muffins and place them cut side down on a baking sheet. Pop them under the grill and toast the bottoms until golden and crisp.

Turn

Turn the muffins over, but don&#039;t toast the top side yet! Reduce the grill to medium.

Spread

Spread the cheese and mushroom mixture evenly over the tops of the muffins and pop back under the grill for 2-3 minutes until the cheese has melted and gone golden.

Serve

Serve! We love this with some rocket and roasted or grilled tomatoes.

Mushroom and Rarebit Muffins - Pinch of Nom

Give classic Welsh rarebit a tangy twist with lime pickle in this easy lunch. If you don’t have any, this could work well with spicy mango chutney instead

Lime pickle rarebit

plain flour

beer

mature cheddar, grated

tbsp lime pickle, finely chopped

bread (we used sourdough)

green salad, to serve

Melt the butter in a saucepan over a medium heat. Once foaming, tip in the flour and mustard powder and stir until a paste forms. Continue to cook for 2-3 mins until the paste turns darker. Splash in the Worcestershire sauce and a little of the beer. Stir and continue adding the beer slowly, stirring well after each addition, keeping the heat low to make sure the mix doesn’t boil.

Heat the grill to high. Remove the saucepan from the heat and stir through the cheese and lime pickle, continuing to stir until the cheese has melted. (You may need to return the pan to a low heat to completely melt the cheese.) Season with a pinch of pepper and set aside. Arrange the sliced bread on a baking tray and lightly toast both sides under the grill, 1-2 mins each side. Spread the cheese sauce over the top and grill for a further 3-4 mins until bubbling and browned. Leave to stand for 2 mins before serving with a green salad in a lemony dressing, if you like.
