These raw vegan brownies are so fudgy and delicious and topped with a seriously decadent raw chocolate topping.

Raw Vegan Brownies

Walnuts ((400 grams))

Soft Pitted Medjool Dates ((350 grams) Packed cups)

Cocoa Powder ((42 grams))

Coconut Oil ((60 milliliters) Melted)

Maple Syrup ((60 milliliters))

tsp Vanilla Extract

Cocoa Powder ((21 grams))

Add half the walnuts, half the dates and half the cocoa powder to the food processor and process. The mix will first become crumbly and will stick to the sides, but then gradually will become sticky and start to clump together into a kind of dough. It needs to be oily and when you grab some of the dough and roll it in your fingers it must stick together.

Transfer that to a mixing bowl and then add the second half of the walnuts, pitted dates and cocoa powder to your food processor and repeat the process. Transfer to your mixing bowl and mix together well.

Spray an 8 x 8 square dish with non-stick spray and line it with parchment paper so that there is overhang on each side. Press the brownie mix down into the dish and pack it down with the back of a spoon.

Melt the coconut oil and then add the maple syrup, vanilla and cocoa powder and stir or whisk together until smooth. Pour it over the brownie base and smooth down evenly.

Place the dish into the fridge until completely set before slicing.

Keep them stored in the fridge where they will stay good for at least a week. They are also freezer friendly!

Chocolate Protein Balls (No Bake)

cocoa powder ((I use NOW Foods brand))

maple syrup ((I use NOW Foods brand))

almond butter (, use sunbutter

vanilla extract

sea salt

chocolate chips (, omit for even healthier option)

water (, optional (see note))

Put everything except the chocolate chips and water into a bowl and mix well.

Slowly add water if needed. You may not need any water if your almond butter is runny. If you are rolling these into balls, only add water if you need help mixing the batter well. Start with a teaspoon and slowly add until you get a well mixed batter. If you add too much then the batter will be too soft to roll.

Add chocolate chips and mix again.

Eat right away if you are eating as batter.

Allow to chill in the fridge while you clean up, then roll into balls if you prefer to eat it that way.

These double chocolate no-bake brownies are so rich and fudgy no one will ever guess they're vegan and full of wholesome ingredients.

(190 g) walnuts

(425 g) pitted dates, loosely packed

(35 g) raw cacao powder or cocoa powder

tbsp syrup,

tsp sea salt, optional

tsp pure vanilla extract, optional

(85 g) dairy-free chocolate chunks, chocolate chips or chopped dark chocolate

Add the walnuts to a food processor and process to break down into a coarse, grainy four with some small pieces.

Add the rest of the ingredients except for the chocolate and process again until it forms a thick, sticky dough.

Add the chocolate and pulse a few times to mix it into the dough.

Line a standard-sized loaf pan with two overlapping strips of parchment paper that are long enough to stick out either side of the pan. Firmly press the dough into the pan, taking a few minutes to work it into every corner and smooth it out.

Place in the fridge for a few hours or the freezer for about an hour.

Lift and cut into 10 bars. Store the bars in the fridge for up to 2 weeks or freezer for up to 2 months.

These were amazing! I ended up using cashews instead of walnuts and then rolled them into balls and coated them with extra cacao powder. I cannot believe how good they taste and how easy they were to make. Thank you for sharing this recipe!

Raw Vegan Brownies (Healthy No Bake Recipe, GF)

pecans

almonds

sesame seeds, I buy mine toasted

salt

instant coffee, regular

dates

vanilla

cocoa, I

refined coconut oil

cocoa

maple syrup

smooth peanut butter, I use all natural unsalted

Add dates to a bowl and cover with boiling water for five minutes, this softens the dates. Drain and set aside

While dates are softening add the pecans, almonds, sesame seeds, salt and instant coffee to the food processor. Process until completely broken down.

Now add the dates and vanilla and process again until the dates are completely blended in.

Lastly mix in the cocoa, stopping to push the mixture around a few times until the cocoa powder is mixed in. This will take a few minutes.

Pour the mixture into a non stick 8x8 brownie pan and spread evenly in the pan with your fingers while pushing down firmly. Place brownies in the freezer to chill while making frosting.

To make the frosting

 add coconut oil to a medium microwave safe bowl and melt in the microwave until just melted. Whisk in the rest of the ingredients until smooth. Pour over the brownies. Tilt the pan a little to evenly distribute the icing.

Place uncovered in the fridge for 40-60 minutes until the chocolate frosting has set. Slice and enjoy! Makes 16 bars
