Red Curry Lentils

lentils,

onion,

butter

red curry paste

garam masala

curry powder

turmeric

sugar

garlic,

ginger,

cayenne pepper

tomato puree

coconut milk

cilantro

rice

Cook the lentils according to directions. Drain and set aside.

Red Curry Lentils Step 1

Melt the butter in a large saucepan over medium high heat. Add the onion and saute for a few minutes until fragrant and golden. Add all the spices (curry paste, garam masala, curry powder, turmeric, cayenne, sugar, garlic, ginger) and stir fry for 1-2 minutes. Add the tomato puree; stir and simmer until smooth.

Red Curry Lentils Step 2

Add the lentils and the cream. Stir to combine and simmer for another 15-20 minutes (the longer, the better)! Serve over rice and garnish with cilantro.

Red curry lentils is one of my favorites! This version is so simple - just toss everything in the crockpot. Easy, healthy, and full of flavor.

Crockpot Red Curry Lentils

regular brown lentils (I used maasor lentils this time)

onions, diced

ginger

butter (optional)

tomato puree (29 ounces each)

salt

Rinse the lentils and place them in a large crockpot. Add the diced onions, garlic, ginger, butter, curry paste, garam masala, turmeric, sugar, and cayenne. Stir to combine.

Pour just 1 can of tomato puree over the lentils. Re-fill the can with water twice and add to the crockpot. Stir to make sure that the lentils are covered with liquid. Cover and cook on high for 4-5 hours or low for 7-8 hours.

Check once or twice during cooking to add more water or tomato puree if the lentils are soaking up all the liquid. The amount of water or tomato puree you add depends on how soupy your want your lentils to be. For me, 1 1/2 cans of tomato puree plus the two cans of water was perfect. Taste and season with salt. Lentils will be soft when they are done cooking.

Stir in the coconut milk and sprinkle with cilantro just before serving. Serve over rice or naan bread.

Crockpot Red Lentil Curry

These warm and hearty, red curry lentils are easy to make in one pot and full of delicious Thai-inspired flavour. This recipe is perfect for meal prep as the flavours only improve with time.

Thai Red Curry Lentils

tbsp olive or coconut oil,

white onion, diced

tbsp fresh ginger, minced

tbsp red curry paste

14 oz can light or full-fat coconut milk

vegetable broth

tbsp coconut sugar

gluten-free tamari or soy sauce

red lentils

carrots, chopped, approx. 1.5 cups

green pepper, diced, approx. 1 cup

lime

optional: 1/4-1/2 cup water or vegetable broth, add as needed to adjust thickness

cooked brown or basmati rice

Heat the oil in a large pot. For an oil-free recipe, omit the oil and use 2 tbsp of water or vegetable stock to saute the veggies.

Add the onion, garlic and ginger and cook for 5 minutes, stirring often. Add a bit more water, if it pan starts to try out.

Stir in the red curry paste and cook for two more minutes, stirring.

Add the rest of the ingredients and simmer lightly for about 20 minutes, stirring occasionally, until the vegetables and lentils and soft and tender. If it gets too thick as it&#8217;s cooking, add a little additional water or stock to adjust the consistency.

Serve over cooked brown or basmati rice, topped with fresh cilantro and a squeeze of fresh lime. Enjoy right away or store in the fridge for 5 days or freezer for up to 3 months.

This was easy to make, very delicious and hearty enough that I did not need rice or quinoa?  Will definitely be keeping this on rotation.

Instant Pot Red Curry Lentils

brown lentils

1/2 large onion, diced

Place all ingredients in the Instant Pot. Cook on high pressure for 15 minutes. Natural pressure release (meaning just let it sit) for 10 more minutes.

Stir in the coconut milk and butter. Taste and adjust seasonings.

Yay! So excited to see one of my favorites converted to the IP! Question, what lentils works best with this? I have been shortcutting with Trader Joes precooked lentils for so long, I don't have a clue where to start with dried lentils!

Can this be done in a crock pot? If so, what should i do diferently?

This Red Curry Lentils recipe is fabulous! As a variation, I substitute freekah for 1/2 the lentils to vary texture and nutrition. I served over baked potatoes pieces as substitute for rice.

Made this last night so I could have healthy lunches at work this week - really yummy. Good to have another reason to pull out the instantpot.

Thank you for this wonderful recipe and easy to follow instructions! I made this last Sunday and it turned out delicious, all my family loved it! Highly recommend this. My wife was pretty impressed that the instant pot sautéed like that. I ran out of red lentils so used green lentils and added two sweet potatoes too. Pinned!

This recipe turned out perfect exactly as written, which makes me very happy! I served it with flat bread, basmati rice and thin strips of carrot and cucumber. I feel like the lentils are delicious enough on their own though. Thank you Pinch of Yum!
