Indian style red lentil dish prepared with basic spices and seasoning. It can be served with plain rice or any Indian breads like roti, paratha or naan. Instructions for Instant pot, stove top or regular pressure cooker.

Masoor Dal Recipe (Red Lentil Recipe)

moong dal ((optional))

tomatoes (chopped & deseeded)

green chili ((optional))

water ((for 1¾ cups for IP))

ghee (or oil

red chili (broken)

garlic (cloves chopped)

mustard seeds ((optional))

cumin seeds

asafoetida ((hing))

salt

red chili powder

turmeric

garam masala ((or ⅛ tsp) (adjust to taste))

kasuri methi ((dried fenugreek leaves) or 2 tbsp coriander leaves)

lemon juice (for serving)

Masoor dal recipe (Red lentil recipe)

Add masoor dal &amp; moong dal (optional) to a pot or pressure cooker. Wash it a few times until the water runs clear.

Next add chopped tomatoes, water and green chili.

Pressure cook for 1 to 2 whistles on a medium heat. If cooking in a pot, cook on a medium heat until soft adding more water if needed.

Once the pressure releases, open the cooker.

Mash the dal to suit your liking. You can make it smooth or keep it grainy. If needed you can pour 2 to 3 tbsp water to bring it to a consistency.

Stovetop masoor dal

Heat 1 tbsp ghee in a small pan.

Add mustard, cumin, red chilies and garlic.

Saute until the garlic turns slightly golden.

Turn off the heat and add hing, chili powder and turmeric. You can also add in garam masala if using.

Quickly pour this off to the dal. Time to add salt and kasuri methi if using.

Mix and simmer for 2 mins. If using coriander leaves add them now.&nbsp;

Squeeze in some lemon before serving. Masoor dal is ready to serve with roti or rice.

Tempering

Press saute button on the Instant pot and pour oil to the inner pot.

Add mustard, cumin, broken red chilies and garlic.

When they splutter add tomatoes along with salt, chilli powder, hing, garam masala (optional) and turmeric.

Saute for 1 min. Next add dal, green chilli and pour water.

Stir well and deglaze to release any bits of food stuck. Secure the Instant pot with lid. Set the steam release handle to sealing.

Optional :You can cook basmati rice together by placing the rice bowl on a long legged trivet.

Press pressure cook button and set the timer for 7 mins.

Wait for the pressure to release naturally. When the pin drops, open the IP.

Stir well and add more salt &amp; hot water if needed. Cook on saute mode to bring to consistency if needed.

Squeeze lemon juice and serve masoor dal with rice.

Instant pot masoor dal

Super flavorful, spicy (but not too hot) vegan red lentil soup with Thai red curry paste, coconut milk and lime. Simple and soul-satisfying!

Thai Coconut Red Lentil Soup

virgin coconut oil olive oil

onion

carrot

garlic cloves (2 or 3 cloves)

tomato paste

Thai red curry paste

cayenne pepper

Salt

water

full fat coconut milk

lime juice

cilantro leaves

Heat the oil in a large pot or Dutch oven over medium heat. Add the onion and carrot and cook 5 minutes, or until softened.

Stir in the garlic, tomato paste, curry paste and cayenne and cook until fragrant, about 1 minute.

Add the lentils, 1 teaspoon salt and the water. Bring to a simmer, then turn the heat down to medium-low. Partially cover the pan and cook 20 minutes, until the lentils have swelled and softened and the mixture is thickened.

Remove from the heat and stir in the coconut milk and lime juice. Taste and season with additional salt if you like. Serve in bowls garnished with cilantro.

In steps 1 and 2, use the saute function to heat the oil, onion and carrot, followed by the garlic, tomato paste, curry paste and cayenne.

Add the lentils and water as in step 3. Cover the pot and cook on high pressure for 6 minutes. Let the pressure release naturally.

Stir in the coconut milk and lime juice and serve with garnish.

Hearty Chickpeas and Red Lentils Recipe

carrots

onion (diced)

red lentils,

dairy-free milk

vegetable broth

Roma tomatoes, diced

chickpeas, drained, also called garbanzo beans

Garam Masala seasoning

Partially boil the carrots then drain and set aside. Only about 5 minutes.

While the carrots are cooking add a couple of tablespoons of water to a large skillet and heat to medium. Add the onion and sauté until translucent. About 10 minutes.

Add the red lentils, dairy-free milk, vegetable broth, water, tomatoes, partially cooked carrots, garbanzo beans, garam masala ( This is a homemade recipe that is so easy to make and it will help you save money too), curry powder and salt. Stir well.

Bring to a quick boil and then turn down and simmer on medium heat for 20 minutes.

Every once in a while, stir to keep the beans and lentils from sticking.

At the end of 20 minutes check to see if the lentils are done. If not, cook a very few more minutes.

Taste and check for more salt or a dash of pepper but I don't think you will need any.
