7 Up (or other citrus soda)

orange jello

oz cream cheese, softened

oz tub of Cool Whip, thawed

mandarin oranges, drained

Pour 2 cups of the soda into a small bowl and microwave until nearly boiling, 2-3 minutes.

Remove the heated soda from microwave and stir in the package of jello.

In a large bowl, beat the softened cream cheese until smooth and then add the jello mixture. Beat until fully combined.

Stir in the remaining 2 cups of chilled soda, then fold in the Cool Whip and mandarin oranges.

Transfer the mixture to a 9x13 baking dish and cover. Refrigerate for 4 hours or until set.

This recipe for Mum&#x27;s Two Ingredient Strawberry Mousse is one of my favourite &quot;frugal&quot; retro recipes. Mum used to make this regularly for Sunday Tea, as well as for special occasions, such as Birthdays, Easter, Christmas and just because! Made with just two main ingredients, Evaporated Milk and Jelly, you can add lemon juice if you like a sharper flavour, and mum always added lemon juice to hers. If you don&#x27;t have any fresh lemons, then bottled lemon juice works just fine, and those little lemon shaped bottles of Jif Lemon Juice.

evaporated milk

lemon, lemon juice

Add  150mls of cold water, and put the jelly in the fridge for between 45 minutes to 1 hour, until the jelly is ALMOST set, it will still be very wobbly and almost runny.

Whisk the chilled evaporated milk with the lemon juice in a mixing bowl until it has tripled in volume and is thick and frothy.

Add the just-set jelly to the evaporated milk...

Add the just-set jelly to the evaporated milk mixture and whisk again until it is smooth and all blended together. If using a red berry jelly it will be a very pale pink. It's at this stage that you can add any chopped fresh berries, or frozen berries.

Spoon the mousse back into the serving bowl...

Place the mousse back in the fridge or a cold place to set completely. This will take about 1 hour. Once it has set, this mouse will last for up to 2 or 3 days in the fridge.

My School Dinner recipes have been very popular lately, and here&#x27;s the recipe for School Dinner Cheese Flan, which I promised to share.

Also called Cheese &amp; Egg Flan, or Cheese Pie, it has JUST four ingredients in it. Namely cheese, eggs, milk and pastry.

I remember it well from my school days, when it was always served warm with chips and baked beans. 

It wasn&#x27;t always popular with everyone, but as a pie and flan addict, I loved it! It&#x27;s quite a rich recipe, but high in protein, so very filling.

There was something about the slightly wobbly cheesy custard baked in shortcrust pastry, that was somehow very comforting.

The recipe serves 10, which is great for large families. Or, this quantity would be perfect for a potluck supper, picnic, or for the freezer for future meals.

You can of course halve the quantities to serve 5 to 6 people, and bake it in a square 6&quot; x 4&quot; dish or baking tin.

It can be eaten cold, such as when taken on picnics, but to enjoy that authentic school dinner taste, it&#x27;s better served warm.

Vintage Chocolate Potato Cake Recipe

Butter (Softened)

Sugar

Eggs

Potatoes

tsp Vanilla Extract

All Purpose Flour

Milk

Cocoa Powder

tsp Baking Soda

Preheat oven to 350 degrees and gather all your ingredients.Prepare your mashed potatoes and allow them to cool before using them in the recipe.

In mixing bowl, cream butter and sugar together until light and fluffy.

Add in potatoes, eggs and vanilla

In large bowl, combine the remaining dry ingredients.

Add ½ dry ingredients, then half the milk. Repeat.Beat on high for 30-45 seconds, until the batter is well mixed.

Spray springform pan with cooking spray. You may also want to use a liner for the pan, to prevent the bottom from sticking.Pour batter into 9” springform pan.

Bake cake for 45-50 minutes, or until knife or toothpick inserted in the center comes out clean.Let the cake cool for at least 10 minutes, then use a butter knife around the edge of the cake to loosen it from the sides.

Release pan and let the cake completely cool.

Sprinkle with powdered sugar.

Serve
