It's so easy to cook a comforting meal of Rice and Dal together at the same time using the pot-in-pot method in your Instant Pot! Vegan and gluten-free.

Instant Pot Rice and Dal

white basmati rice (380 grams)

water (20 oz, use 3 cups if you prefer softer rice)

oil (5 ml, optional but recommended)

cumin seeds

onion

garlic cloves

green chili (chopped)

tomato (chopped)

toor dal (50 grams, split pigeon pea lentil)

yellow moong dal dhuli (50 grams, split moong bean lentil)

water (24 oz, or more as needed)

turmeric powder

salt (or

baby spinach (optional)

lemon (juice of)

Rinse rice until water turns clear and then drain the water. Place the rinsed and drained rice in a steel container.

Add water and oil to it and give a quick stir. You may also add pinch of salt if you like. Set this aside and start making the dal in the main pot.

Press saute button on the instant pot and once it displays hot, add oil and then add cumin seeds to the steel pot. Let the seeds sizzle for few seconds.

And then add chopped onion, garlic and green chili. Cook for 2 to 3 minutes until the onions soften a bit.

Then add in the tomatoes and cook for 1 minute.

Add the rinsed dal to the pot along with water, turmeric powder and salt. Give it a good stir.

Now, place a long leg trivet inside the pot and then place the rice container on top of the trivet. I cover the container with a lid or aluminium foil but you may leave it uncovered too.

Close the pot with its lid and press the pressure cook or manual button. Cook on high pressure for 9 minutes with the pressure valve in the sealing position. Let the pressure release naturally.

Once the pressure has released naturally, open the lid and carefully remove the lid from the rice container. Remove the rice container from the pot carefully using a pair of tongs.

Give the dal a stir. I also added extra 1/2 cup water here as the dal was too thick for my liking. If using spinach, press the saute button now and add the spinach leaves. Let the dal simmer on saute for 2 to 3 minutes until the leaves wilt.

Squeeze in some fresh lemon juice and enjoy hot rice and dal!

Pressure Cooker Rice and Dal

Ghee

Black Mustard Seeds (or use additional 1 teaspoon cumin seeds)

Jalapeño Peppers (chopped into big visible pieces (Optional))

Garlic (smashed)

Kosher Salt

Toor Dal (yellow pigeon peas, rinsed and drained)

Water

Basmati Rice (rinsed and drained)

Cilantro

In a 6 x 3 pan, add all ingredients of the rice, mix well, and set aside. (you can use a larger or smaller pan for the rice with impunity. It’s a pretty forgiving way to make perfect rice).

Turn your Instant Pot on Sauté (high heat setting). When the pot reads HOT, add ghee, or coconut oil/oil.

Once this oil starts to shimmer indicating that it is hot, add cumin seeds, mustard seeds, and the chili if using, and stand back. These seeds will sputter like popcorn within 10-15 seconds.

Add the ginger and garlic and sauté for 10 seconds.

Add onions, tomatoes, turmeric, and salt, and stir until well mixed.

Pour in toor dal and water and scrape well to ensure nothing has stuck to the bottom.

Place the tall steamer rack inside this liner (on top of the dal basically)&nbsp;

Place the pan of rice on the steamer. It is not necessary to cover the rice.

Cook at high pressure for 10 minutes, and allow it to release pressure naturally for 10 minutes. Then release all remaining pressure.

Using little silicone mitts, carefully remove the rice, as well as the steamer rack.

Check the consistency of the dal. You want a thick mixture akin to porridge.

Serve each bowl with rice and dal, and pass around some extra ghee or whatever you’re using as a substitute to pour over your piping hot and lovely rice and dal.
