Sweet Curry Drumsticks with Basmati Pilaf

(50 mL) mango chutney or apricot jam

tbsp (30 mL) each prepared yellow mustard and honey

tbsp (15 mL) lemon juice

tsp (10 mL) mild Indian curry paste or powder

chicken drumsticks (skin removed if preferred)

¼ tsp (1 mL) ground black pepper

⅓ cups (325 mL) U.S. basmati rice

chicken broth

½ tsp (2 mL) turmeric

(125 mL) frozen baby peas

carrot,

green onion, finely chopped (approx.)

tbsp (15 mL) butter

Step 1

Preheat oven to 425°F (220°C). Heat chutney in a microwave-safe bowl on high for 40 seconds or until melted. Stir in mustard, honey, lemon juice and curry paste.

Step 2

Toss drumsticks with half of the sauce mixture, ¼ tsp (1 mL) salt and the pepper. Arrange drumsticks on a nonstick foil or parchment paper lined, rimmed baking sheet. Roast for 15 minutes. Baste with sauce. Roast, basting and turning often, for 10 to 15 additional minutes or until sauce is caramelized and chicken is cooked through.

Step 3

Meanwhile, combine rice with broth, turmeric and remaining ½ tsp (2 mL) salt in a small saucepan with a tight fitting lid. Bring to a boil over medium-high heat. Cover and reduce heat to low. Cook for 12 minutes. Uncover and stir in peas, carrot, green onions and butter. Cook, covered, for an additional 3 minutes. Remove from heat; let stand for 5 minutes. Fluff rice with a fork.

Step 4

Serve drumsticks with rice pilaf and sprinkle with extra green onions (if desired).

Wash

In a strainer, wash the lentils under cold water.

Grease

Lightly grease the bottom and sides of the rice cooker with cooking spray or cooking oil and a paper towel.

Add the lentils, vegetable broth and minced garlic to the rice cooker. If you have it, set your rice cooker to grain mode.  If you don&#39;t have grain mode, set it to high, or simply turn it on (as you would to cook rice).

Cook

Put the lid on and cook for 40 minutes, removing the lid and stirring once at the halfway point.

Grilled Shrimp Rice Cakes with Chili Plum Sauce

lb (500 g) raw, peeled and deveined shrimp

(125 mL) chopped green onions

tbsp (15 mL) each minced fresh ginger and toasted sesame oil

garlic,

tsp (2 mL) each salt and pepper

(750 mL) cooked U.S. medium grain white rice

egg, beaten

(250 mL) panko or fine bread crumbs (approx.)

tbsp (30 mL) canola oil

(125 mL) prepared plum sauce

(50 mL) sweet Thai chili sauce

tbsp (30 mL) lime juice

Pulse shrimp with green onions, ginger, sesame oil, garlic, salt and pepper in a food processor until finely chopped. Transfer mixture to a large bowl. Gently mix in rice and egg until well combined. Lightly pack mixture into a 1/4 cup (50 mL) measure; turn out and smooth edges to form patties.

Place panko crumbs in a shallow dish. Turn patties in the crumbs to lightly coat, shaking off the excess. (Shrimp cakes can be prepared up to this point, layered in an airtight container between sheets of waxed paper and reserved in the refrigerator for up to 1 day or frozen for up to 1 month.)

Preheat grill to medium-high; grease well. Brush patties lightly with canola oil. Grill patties for 3 minutes per side or until golden and opaque throughout.

Stir plum sauce with chili sauce and lime juice. Serve shrimp cakes with chili-plum sauce on the side for dipping.
