Similar to gratin, Doria is the savory meat sauce over steamed rice, covered with melted cheese and baked in the oven. This Yoshoku (Japanese western meal) is a comfort dish from childhood to many Japanese.

Meat Doria (Rice Gratin)

rice cooker cups Japanese short-grain rice

onion

celery

carrot

mushrooms

ground beef ((preferably beef 70% & pork 30%))

diced tomatoes ((14.5 oz, 411 g))

vegetable stock

Tbsp extra-virgin olive oil

bay leaf

Tbsp red wine

sugar

Tbsp ketchup

Tbsp tonkatsu sauce ((or Worcestershire sauce))

unsalted butter

salt (I use Diamond Crystal; use half for table salt)

black pepper

Mozzarella cheese

Parmigiano-Reggiano (Parmesan) cheese

panko (Japanese breadcrumbs)

parsley ((fresh, to garnish))

Gather all the ingredients. Start cooking rice using a rice cooker, instant pot, or a&nbsp;pot over the stovetop.

Finely chop the onion, celery, carrot, and parsley and slice the mushrooms.

In a large skillet, heat oil on medium high and cook the bay leaf until fragrant. Then sauté the onion and the celery until soft.

Add the mushroom and the carrot and cook until soft.

Add the meat and pour red wine. Use a wooden spoon to break up the meat.

When the meat is almost cooked, add tomatoes with their juice and the sugar. Then add vegetable broth just enough until all the ingredients are covered (Don&#039;t put too much; You will need to reduce the cooking liquid until it&#039;s almost evaporated).

Add Ketchup and Tonkatsu sauce and bring it to a boil.

Remove excess fat from the soup.

Reduce heat to medium-low and simmer (without a lid) until most liquid is evaporated. When you move the meat sauce and see the bottom of the skillet, it’s done cooking.

Add the butter and season with salt and pepper.

Butter the baking dish(es) and put steamed rice.

Pour the meat sauce on top of rice. Then sprinkle 2 kinds of cheese and Panko on top.

Set the oven setting to broil (high) and broil for 2-3 minutes until the cheese is nicely melted and turns golden color. Garnish with parsley and serve.

You can keep the leftovers in an airtight container and store in the refrigerator for up to 3 days or in the freezer for a month.

Tbsp curry powder

chicken/vegetable stock

Tbsp tonkatsu sauce ((Homemade tonkatsu sauce recipe))

Tbsp unsalted butter ((separated))

Mozzarella cheese ((2 oz; you can use gruyere, parmesan, etc))

Romano cheese ((2 oz; you can use gruyere, parmesan, etc))

Tbsp panko (Japanese breadcrumbs)

parsley ((for garnish))

Gather all the ingredients. Start cooking rice with a rice cooker, a pot over the stove, an instant pot, or a donabe. You will also need 2 medium-size baking dishes or 1 large baking dish.

Mince the onion, celery, and carrot into small pieces.

Heat olive oil over medium heat and add crushed (or minced) garlic and a bay leaf (if you tear in half, the fragrance will come out faster).

Saute minced onion and celery over medium high heat until they are almost translucent.

Add carrot and cook until tender.

Add the meat and break it up, stirring occasionally. Cook until the meat is no longer pink.

Season with salt and pepper.

Add 1 Tbsp curry powder and 1 ½ cup chicken/vegetable broth. If the liquid doesn’t cover the ingredients, you will need to add more broth or water.

Cover with the lid and bring to a boil. Once boiling, uncover and skim off the foam, fat, scum off from the liquid. It’s important to get rid of them so that you can achieve a nice and clean soup. Reduce the heat to medium low and cook for 5 minutes.

Add 2 Tbsp Tonkatsu sauce, 2 Tbsp ketchup, and 1 Tbsp butter. The meat mixture should be a bit on saltier side than bland taste. You will be eating this dish with rice, so make sure it’s well seasoned. Cook and reduce the sauce until you see the bottom of the pan, about 10 minutes, and turn off the heat.

Use the other 1 Tbsp butter to grease the sides and bottom of the baking dish(es). Place the steamed rice in the baking dish.

Place the meat mixture (and sauce, if you like) on top of the rice. Then sprinkle both kinds of cheese. Finally sprinkle panko on top to add crispy texture.

Pre-heat the oven on broil for 5 minutes. Broil for 2-3 minutes until the cheese has melted and you see nice char on top. If you don’t have a broil setting, you can simply bake it until the top is golden brown. Everything is already cooked, so all you need to do is melt the cheese.

Sprinkle fresh parsley on top and serve immediately.

You can keep the leftovers in an airtight container and store in the refrigerator for 3 days or in the freezer for a month.

How To Make Curry Doria (Recipe) カレードリアの作り方 （レシピ）

Doria is a Japanese-invented gratin. Pour béchamel sauce with prawns over the butter rice, then brown the surface with cheese on top. Prawn Doria (Japanese Rice Gratin)

tbsp grated parmesan cheese

butter

onion ((medium) finely diced)

/ 2.5 ounces mushrooms (thinly sliced (note 2))

tbsp flour

milk

chicken stock ((note 3))

salt

white pepper ((or black pepper))

cooked rice ((loosely packed 2 cups))

/ 1.1 ounces onion (finely diced)

Salt and pepper

Melt the butter in a frying pan over medium heat.

Add carrot and onion, sauté for a minute or two until the onion becomes semi-transparent.

Add the rice and mix, breaking up the lumps. Season with salt and pepper.

When the rice grains are well coated in butter and the vegetables are mixed evenly, transfer the butter rice to two individual gratin baking dishes.

Butter Rice

Heat the frying pan used for the butter rice over medium high heat. Add a small amount of butter if the pan is too dry.

Add prawns and cook for a minute, then turn them over and cook further 1 minute.

Melt the butter in a saucepan over medium heat.

Add onion and mushrooms, sauté until the onion becomes transparent.

Reduce the heat to low, add flour and mix well for a couple of minutes.

Add about 1/3 of milk to the pan and mix well to incorporate until lump free (you may need to whisk it). Add the remaining milk, prawn broth, chicken stock cube, salt and pepper.

Increase the heat to medium. As the sauce heats up, it thickens. Stir regularly at first, then constantly as it thickens.

Once the Sauce is thick enough (note 5), transfer the prawns to the béchamel sauce. Mix and remove from the stove immediately.

Béchamel Sauce

Preheat broiler (note 6).

Pour the béchamel sauce over the butter rice in the baking dishes, covering the rice completely.

Sprinkle parmesan cheese over the sauce.

Place the baking dishes on the rack not too close to the heat (about 10cm / 4” away). Bake for a few minutes or until the sauce starts bubbling around the edges and the top becomes golden. Serve immediately. (note 6)
