This fun dessert is great for gift giving. They are so easy to make you can involve the whole family.

Caramel Marshmallow Rice Krispie Balls Recipe

caramels (Kraft caramels)

condensed milk

Tablespoons butter

marshmallows (large)

Rice Krispies Cereal

In a medium saucepan place the caramels, sweetened condensed milk, and butter. Over medium heat stir constantly until smooth and creamy.

Using a toothpick or skewer, dip each marshmallow into the caramel mixture. Tap off the excess.

Pour the Rice Krispies in a big bowl and then gently roll the caramel covered marshmallow in the Rice Krispies.

Place on a cookie sheet that has been lined with parchment paper and gently pull out the toothpick or skewer from the marshmallow.

Let set up for about 30 minutes.

Set up a double boiler over medium-low heat and melt the caramels, sweetened condensed milk, and butter until a smooth caramel mixture forms - this is my preferred method. You could also use a medium heat-proof bowl and melt the ingredients in the microwave on a low setting, stirring regularly. Just be careful to not let the mixture scorch.

Drop a marshmallow into the caramel. Using a fork in each hand to maneuver the marshmallow, quickly turn the marshmallow to completely cover it with caramel. Lift the marshmallow out with one of the forks, and tap the fork handle lightly on the side of the bowl to force excess caramel down through the fork’s tines and back into the bowl. Slide the fork outward from the bowl, dragging the bottom of the tines along the rim of the bowl, letting any other excess caramel drip down the inside of the bowl. Transfer caramel-dipped marshmallow to the bowl of rice cereal. Dedicate a third fork for rolling the caramel-dipped marshmallow around in the cereal. Once marshmallow is coated with a layer of cereal, transfer it to the prepared baking pan. Repeat with remaining marshmallows. Add more rice cereal to the bowl as needed. I like to drop three to four marshmallows in the caramel at a time, and then work quickly to cover each one with caramel and then rice cereal. This makes the process go much faster!

Once caramel is set, store in an air-tight container with wax paper separating any layers. I like to store these in the refrigerator if I'm anticipating them being completely devoured within a day or two. For longer storage, place container in freezer. The puffs are also fun to eat frozen or just slightly thawed - it's how I liked to eat them when I was a kid!

These No-Bake Coconut Krispie Date Balls are made with dates and Rice Krispies and rolled in coconut. This classic Christmas cookie is a requirement in my house!

Coconut Date Balls

(311 grams) dates, chopped

½ cups (285 grams) granulated sugar

eggs, slightly beaten

(15 milliliters) milk

vanilla extract

(160 grams) Rice Krispie cereal (or similar cereal)

Remove pits and chop dates into small pieces, about the size of a dime. Dates are very sticky, if you have latex gloves, I would suggest using them.

In a large saucepan, melt butter and sugar together, stirring occasionally until the butter is melted.

Turn the heat to low and add chopped dates and cook until mixture is boiling, about 15 to 20 minutes. Stir frequently to prevent mixture from burning.

In a separate bowl, combine eggs, milk and vanilla extract. Once the mixture is boiling, take about ¼ cup of the mixture and pour it into the eggs, and whisk constantly to temper the eggs.

Remove the saucepan from the stovetop and pour the egg mixture back into the saucepan. You will want to work quickly so they do not become scrambled.

Return mixture to the stovetop and boil for about 5 minutes, stirring frequently. Remove the mixture from the heat. In a large mixing bowl, combine rice cereal with date mixture and stir until evenly coated. Allow the mixture to cool until it can be handled.

Shape date mixture into balls (1 to 2 tablespoons in size) and place on a sheet pan. For a higher yield, reduce the size of the balls.

Place the shredded coconut in a separate bowl and roll each date ball (one at a time) in the shredded coconut, gently pressing coconut into the dates. Refrigerate the date balls for one hour. Store in an airtight container and keep refrigerated or frozen.

My grandmother has made these since the 30's! (I wasn't there then 😉)
They are my personal favorite holiday cookie!

Rice Krispie Cereal

Line a large rimmed baking sheet with parchment paper and set aside.

Place the sprinkles in a small bowl and set this aside as well.

In a medium sauce pot over low heat melt the butter. Add the mini marshmallows into the melted butter and stir frequently until the marshmallows are melted and smooth. Immediately remove this from the heat.

Stir in your cereal and allow the mixture to cool for 5 minutes.

Lightly grease your hands and form the krispie treat mixture into 1 tablespoon-sized balls.

Immediately roll each ball into the sprinkles, coating evenly. Place each ball onto the lined baking sheet and repeat the process with all the krispie treat mixture.

I followed the directions perfectly. There was no direction on when to put the salt…. There was absolutely no rolling into a ball. The Rice Krispies just stuck to my hand. With my hands lightly greased, with nothing on them, any way I tried. Very disappointed
