My take on a traditional shrimp Pad Thai. It's sweet, salty and tangy at the same time - it's basically a healthier, lower-carb version of what you would get in a restaurant and the flavor is practically the same.

Gluten Free Pad Thai

prawns -

eggs

bell pepper

zucchini

spring onion/scallion -

Sesame oil -

servings brown rice noodles

lime

stevia

Cilantro/coriander -

tamarind paste

tbsp coconut aminos

fish sauce

Ginger powder -

Garlic powder -

Chilli flakes chillis

In a bowl, mix all the sauce ingredients well and set aside.

Make the sauce:

Spiralize zucchini into zucchini noodles and chop the bell peppers into long vertical strips.

In a pan, lightly stir fry the zucchini and bell peppers on medium heat until just cooked through. Set aside.

In a separate pot, boil rice noodles as per instructions on the package.

Cook prawns until well done in pan, set aside.

Fry 2 beaten eggs in a large pan then remove pan from heat.

Drain your boiled rice noodles and add it into the large pan.

Into the same large pan, add in your cooked prawns.

Into the same large pan, pour in the pre-mixed sauce and cooked vegetables. Finish with a drizzle of sesame oil, mix it all together and plate into 2 portions.

Cut your lime into quarters, squeeze a wedge of lime over each portion (or to taste).

Garnish with coriander, crushed peanuts, a lime wedge and some thinly sliced spring onion.

Drunken Noodles ( Pad Kee Mao )

250 g Chicken thigh (Boneless skinless chicken thigh/breast

100 g Dried rice noodles noodles

Garlic (Finely chopped)

Shallot (Finely chopped)

Bird Eye Chilli (Or any hot chilli

Red Chilli Pepper (Or red bell pepper)

Basil leaves (Thai/ Italian/ Regular Sweet Basil)

Vegetable oil (Or neutral flavour oil)

tbsp Light soy sauce

tbsp Oyster sauce

tsp Dark soy sauce

tbsp Fish sauce

Sugar

Lime Wedges

Red Chilli Slices

First soak the dry rice noodles in warm water for 15-20 minutes then drain the water out and set it aside. Cut the chicken thigh into medium bite-size pieces. Cut stem part of Chinese broccoli into 1&quot; pieces and leaves into 2&quot; pieces. Separate the stem and leaves. Finely chop the shallot, garlic and onion.

Add light soy sauce, dark soy sauce, oyster sauce, fish sauce and sugar in a small  bowl. Mix well until sugar dissolve and set it aside. To season the chicken pieces, add 1 tablespoon of sauce mixture, mix well and set aside.

Heat the large wok/pan into medium-high heat, drizzle 2-3 tablespoon of oil. Add chopped shallot and stir fry until translucent, then follow with the garlic, stir for few seconds. Next add the chopped chillies and continue stir fry for about 1 minute, until nice fragrant comes out.

Then add the chicken and stir fry for 2-3 minutes until no longer pink, then add the stem part of Chinese broccoli stir for 1 minute and follow with leaves.

Stir for few seconds, place the noodles in the middle of the wok. Pour the sauce over the noodles. Stir fry with high heat for about 2 minutes until the noodles are cooked through, then add the chilli slices and continue stir fry for another 1-2 minutes.

Last, turn off the heat and add a handful of basil leaves. Combine well with everything.

Transfer to serving plate and serve immediately. Garnish with lime wedges and chilli slices.

Tahini noodles are flavorful, creamy, and so satisfying. Like a sesame version of peanut soba, this recipe is welcome comfort food on busy weeknights. Vegan and easily made gluten-free and/or oil-free.Yield: serves 2 to 3 people; double the sauce if preparing a standard 16 oz. package of pasta

Tahini Noodles (20 Minutes!)

dry noodles

broccoli,

tahini

rice vinegar

maple syrup

lime juice (about 1 small lime)

garlic,

black pepper, optional

red pepper flakes, optional

chopped green onion

cilantro

sesame seeds cashews

Boil

Bring a pot of lightly salted water to a boil. Cook the noodles/pasta according to package directions, and when there are about 2 minutes remaining on the timer, add the broccoli and bok choy to the pot. Stir well. When the noodles are done, drain all in a colander.

Whisk

To make the sauce, combine the tahini, sesame oil, rice vinegar, and maple syrup in a bowl. Whisk until smooth (it will be thick). Add the soy sauce, lime juice, garlic, black pepper, and red pepper flakes, if using, and whisk to combine.

Combine

Return the noodles and veggies to the pot and toss with sauce. Serve warm. If desired garnish with green onion, cilantro, or sesame seeds.

Made this last night using lions mane mushrooms instead of bok choy and it was delicious!  Thank you for another wonderful recipe.

We've made this twice now, the first time for non-vegan friends (who loved it!) and the second time for ourselves because it was THAT good. We added precooked marinated tofu both times to give it a protein boost. Easy and delicious.
