You have made it in Persian cooking if you make a good Tah-dig,  the perfect crusted rice that stays together when dumped sand castle style on your platter.  The crunch of the crust with the soft tender rice is sublime. 

Another great food introduced to us by my brother-in-law from Iran.

Polo Ba Tahdig (Persian Rice with Potato Crust)

This is how we Mexicans from California make our rice. We call it Spanish rice, not mexican rice! I didn't hear the term "mexican rice" until I moved to the midwest. This is how all of my family make the rice, aunts and grandmother alike. We don't put in peas or carrots like I have seen from other recipes. I was told by my sons girlfriend that I make it just like the restaurants. I hope that was a compliment!!

Spanish Rice

I took a common green bean casserole recipe and expanded it to a hearty one dish meal.

can(s) cream of mushroom soup

heavy cream

french onions

We've had chilled pasta salad before but never had a chilled rice salad. It's now a new favorite! This salad is light and fresh. We enjoyed the tangy vinegar flavor. It pairs well with the fresh taste of the basil. Serve as a side dish or a main dish. This basil tomato salad is delicious.
