Sweet and savoury, this Japanese Corn Rice recipe is a simple but delicious side dish. Made with only a handful of ingredients, this rice recipe comes together quickly and easily. While amazing with fresh summer corn, this recipe can be made and enjoyed year-round!

Japanese Corn Rice

360 mL jasmine rice (2 rice cooker cups)

water

mirin

tbsp soy sauce (low sodium)

salt

corn (fresh, canned,

butter

Rinse the rice thoroughly until the water runs clear. Then add the rice to a donabe or Dutch oven. Add the water, mirin, and soy sauce.

Place the corn on top in an even layer, do not stir.

Place the lid on top and cook the rice on medium heat for 8 minutes then lower to low heat for 15 minutes. Then, turn off the heat and let the rice rest for 10 minutes before opening the lid and adding butter on top.

Fluff the rice and give it a good mix so the butter is distributed throughout. Add more if desired.

Serve immediately.

Rice with Corn (Arroz con Maiz)

vegetable oil

long-grain, white rice, (rinsed)

green onions, (chopped)

In a large cast-iron pot, heat oil, salt, and water over medium-high heat.

When the water begins to boil, add the rice, stirring occasionally to avoid sticking to the bottom of the pot.

Once the rice has soaked up all the water and begins to dry up, add the corn. Stir to combine well. Lower the heat to low. Cover and let cook for 25 minutes.

Then, stir the rice carefully to fluff it up. Cover for an additional 5 minutes.

Add the green onions and stir to combine.

Serve warm with your favorite main dish.

This dish is very nice and delicious i made it for my husband and he loved it alot

I use Lowrys Hawaiian marinade for my baked/grilled chicken and use this as a side. I also add some pineapple or mango to sweeten it just a bit more than the corn. Yummy!

It reminds me al arroz blanco de mi mamá.
