This delightful pork recipe is taken up another notch by the accompanying cheesy risotto. A great dinner party dish.

Herby roast pork with pea and ricotta risotto

parsley

sage

breadcrumbs

arborio risotto rice

glass white wine

1.6-1.8 litres hot chicken stock

fresh peas

ricotta

grated Parmesan

Preheat the oven to 190°C/fan170°C/gas 5. Whizz the parsley, sage, breadcrumbs and 3 tbsp of the olive oil in the small bowl of a food processor, season well and use to coat the pork. Place in a roasting tin and roast for 25-30 minutes until just cooked. Set aside, loosely covered with foil, to rest.

Meanwhile, heat the remaining oil in a saucepan over a medium heat and gently fry the onion for 5 minutes. Add the rice and stir for a couple of minutes before adding the wine, stirring until it is completely absorbed. Season the risotto, then add the hot stock, a ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.

When the risotto is nearly ready, blanch the peas in boiling water for 1-2 minutes, drain, then stir into the risotto with the ricotta and Parmesan. Cover the pan with a lid, remove from the heat and leave to stand for 5 minutes. Slice the rested pork into thick slices and serve immediately with the pea and ricotta risotto.

This herb and ricotta loaf will hit the spot, any time of day. You will need a 20cm x 10cm x 8cm deep loaf pan for this recipe.

tbs runny honey

(120 grams) sour cream

eggs, lightly beaten

(125 milliliters) milk

unsalted butter, melted, cooled

green shallots, thinly sliced

Creamy Homemade Ricotta with Honey and Herbs

c. pasteurized whole milk

c. pasteurized heavy cream

kosher salt

fresh rosemary, chopped

flaky sea salt

black pepper (ground fine)

Add milk, cream, and salt to a medium...

Add milk, cream, and salt to a medium saucepan. Cook over medium to medium-high heat, stirring frequently to prevent scorching, until milk reaches 190° F. Remove pan from heat and add the lemon juice, then stir it just once or twice, gently and slowly, to incorporate. Let pan sit undisturbed for 10 minutes to let curds form.

Wet a double layer of cheesecloth and ring...

Wet a double layer of cheesecloth and ring out. Lay cheesecloth over the inside of a fine mesh strainer or colander that is set over a large heatproof bowl. Pour the curds and whey into the colander and let the curds strain for at least an hour, for very tender and loose ricotta. Strain for an additional hour or two for a ricotta that is firmer, like a very soft and tender cream cheese. Discard whey or save it for another use. Remove ricotta from the cheesecloth and enjoy immediately or store refrigerated in an airtight container for up to 3 days.

To serve the ricotta with honey and herbs...in...

To serve the ricotta with honey and herbs...in a small dish with sides, mound some of the ricotta in the center. Drizzle a bit of honey over and around the ricotta and then scatter lightly with fresh thyme and rosemary. Finish with a sprinkling of flaky sea salt and freshly cracked black pepper. Serve immediately with crisp salty crackers. Some blackberries would be lovely with this, too!

Lemon Ricotta Pancakes with Raspberry Syrup

raspberries ((fresh

lemon juice

sugar ((or more or less to taste))

unsalted butter ((good quality))

buttermilk

brown sugar

Tbsp sugar

Tbsp lemon

Tbsp lemon juice ((freshly squeezed))

ricotta cheese

½ tsp vanilla extract

all purpose flour ((good quality))

½ tsp baking powder

salt

Place all ingredients in a small pot and simmer for about 8 minutes, remove from heat. Strain if desired.

To make the raspberry syrup:

In a small saucepan, put the butter, buttermilk, sugars, lemon zest, and juice. Stir over low heat until mixture is hot (do not boil.) Remove from heat. 

In a clean, dry bowl, beat the egg whites until stiff peaks form; set aside.

To the mixture in the pot, add the ricotta and vanilla. Then add the egg yolks, and whisk until smooth.

In a large bowl, mix together flour, baking powder and salt, then pour in the egg mixture. Whisk gently until incorporated, but do not over mix.

Gently fold egg whites into this mixture, until mostly homogeneous- again, do not over mix. 

Heat a large non-stick pan or griddle, and drop the pancake batter onto the hot pan in whatever size or shape you would like your lemon ricotta pancakes.

Cook approximately 2 1/2 minutes or until bubbles form, then gently turn over. Cook another 1 1/2 minutes or until completely cooked. Place the lemon soufflé pancakes in the oven or a warming drawer to keep warm, or serve immediately.

Serve with the raspberry syrup and 100% pure maple syrup or any other fruit syrup or even honey. I like to mix the raspberry syrup with maple syrup and serve it in a little jug.
