A Quick + Easy Pasta That Even a 5-Year-Old Can Make—Literally!

rigatoni

Salt and pepper

olive oil

garlic

links Italian sausage (2 sweet

hot)

cooked and sliced

mushrooms

granulated garlic

spinach (about 2 large handfuls)

butter

chicken broth

cherry tomatoes

grated Parmesan cheese (about ¼ cup)

plus more for serving

basil leaves

torn (optional)

Easy Sausage, Mushroom and Tomato Rigatoni

Season with salt and cook the rigatoni according to the package instructions, then drain

Meanwhile, heat the olive oil in a large skillet over medium heat, then add the garlic and saute, stirring occasionally, until golden brown

Add the sausage and mushrooms and saute, stirring occasionally, a couple minutes more

Add the granulated garlic, season to taste with salt and pepper and continue to cook until the mushrooms start to brown

Add the spinach and cook, tossing, until wilted

Add the butter and stir until it's melted

Add the chicken broth, bring to a boil and reduce until most of the liquid is gone

Add the cooked pasta, cherry tomatoes and grated cheese and cook until all the broth is absorbed

Plate the pasta, add more grated cheese on top, if you like, then eat

Cubanelle mild peppers

onion

grated or sliced

vodka

tomatoes

passata

splash of brine

cherry peppers

basil

torn and a few small leaves

heavy cream

Parmigiano-Reggiano

Rigatoni with 3 Pepper Sauce | Rachael Ray

Heat a large pot of water to boil for pasta

Listicle: Rachael Ray 8-Quart Oval Covered Pasta Pot with Pour Spout  If you're roasting red peppers, blacken them under high heat of broiler or over open flame

Heat EVOO in saucepot or Dutch oven, 3 turns of the pan, add fresh peppers, onions, garlic, roasted peppers, salt and pepper

Partially cover the pot and soften 5 minutes, then uncover, add vodka and reduce by half

Add the tomatoes, passata, brine and hot peppers and stir in torn basil

Boil pasta in salted water 1 minute less than package directions, reserve ½ cup salty water and drain

Combine the pasta, sauce and cheese and top with a few small leaves of basil
