Honey Roast Gammon Joint

kg (4 ½ lb) unsmoked Gammon/Ham Joint

500 ml (2 cup) Water

Bay Leaves

cloves

tbsp Honey

tbsp English Mustard

Soak

Soak the gammon joint for a few hours in cold water, we normally do it overnight, or if you don&#39;t have time, rinse under cold water a few times to wash away excess saltiness.

Boil

Place in a deep pan, fat side up, fill pan with enough water to cover the gammon joint.Add bay leaves and bring to the boil. Turn heat down to a simmer and leave to cook uncovered for 1 ½ hours. Top up with more water if gammon is sticking out of the water?

Honey

Mix together the glaze ingredients of honey and mustard.

Netting

After 1 ½ hours, remove from pan and allow to rest, for 10 minutes. Remove netting from the boiled gammon joint.

Skin

Remove the skin/rind away from the gammon leaving a juicy layer of fat

Score

Score the fat layer of the gammon with a sharp knife into diamonds

Cloves

Push cloves into the corners of each diamond

Glaze

Cover a baking tray with foil, before adding gammon joint on top.Pour most of the honey and mustard glaze over the top save a little to reglaze halfway through oven cooking

Oven

Place in preheated oven at 180°c fan / 200°c / 400°f for 15 minutes.

Reglaze

Reglaze by brushing over remaining honey and mustard glaze.

Rest

Cook for a final 15 minutes keep an eye on it and remove sooner if the honey glaze begins burning. Cover with loosely with foil and allow to rest for 10 minutes before carving

Carve

Carve slices of gammon to your desired thickness.

Pan Boiled Gammon

Gammon

Drain the water and place the gammon fat side facing up in the pressure cooker potAdd the Bay leaves and pour 500 ml of water over top, it will not cover the gammon that is fine.

Pressure Cooker

Close the lid, pressure valve turned to the closed position.Place the pressure cooker on meat setting for 50 minutes.

Remove

Once the Pressure cooker is finished, allow 10 min natural release.  Carefully remove the meat from Pressure cooker.Follow from step 3 above, to oven roast the pressure cooked gammon

This roast gammon has perfect crackling and an easy honey and mustard glaze for perfect results.

Simple Roast Gammon

kg gammon

tbsp table salt

tbsp oil

tbsp honey

mustard

Line

Line a large deep roasting dish with foil to hang over the sides.

Bring the meat to room temperature 30 minutes before cooking.

Score the skin and dry the meat with kitchen paper.

Rub half of the salt into the skin. Leave for 30 minutes then wash off the salt with cold water and dry the skin with paper towel.

Rub the skin with the oil and sprinkle over the remaining salt.

Place

Place the meat in the roasting dish and scrunch up the foil to protect any areas of meat while leaving the skin uncovered.

Calculate

Calculate the cooking time by allowing 30 minutes per 500g, (approx. a pound), plus an extra 30 minutes.

Preheat

Preheat the oven to 200 C / 400 F / 180 FAN / Gas 6.

Roast

Roast in the oven for 20 minutes then reduce the heat to 180 C / 350 F / 160 FAN / Gas 4.

Continue roasting then remove the meat from the oven 30 minutes before the end of the cooking time.

Pull the foil away from the meat, remove the crackling and set aside to cool.

Trim

Trim off any excess fat if you wish, to leave an even layer.

Cover

Mix together the honey and mustard in a small bowl and use a pastry brush to cover the meat.

Return the meat to the oven for the final 30 minutes to bake the glaze.

Rest the meat for 30 minutes in a warm place before carving if serving hot.

My recipe for Ninja Pressure Cooker Ham (Gammon) is a fabulous way to cook a large joint of ham, or gammon, in just 1 hour.

Still meltingly tender and infused with aromatics, this method is not just quick, but it saves on energy costs too.

You can cook this in a standard pressure cooker, as well as a Ninja Multi Cooker, or an Instant Pot Multi Cooker.

It&#x27;s bascially my traditional Baked Ham recipe, but cooked in a fraction of the time. Serve this ham for Easter lunch, with lots left over for sandwiches, salads, soups and stews.

We love ham as served part of a Sunday Tea Tray Supper, or for a midweek tea; served with boiled eggs, and homemade bread, 

It&#x27;s also wonderful when served with homemade chunky chips, as part of ham, egg and chips, which was my late dad&#x27;s favourite.

I&#x27;ve shared the recipe for this Ninja Pressure Cooker Ham (Gammon) below, you can of course still make it in the traditional way, if you don&#x27;t have a multi-cooker or a pressure cooker.

For a main meal, serve this with parsley sauce, peas and mashed potatoes for a hearty meal that is sure to please all the family.

Place the ham or gammon in the Ninja...

Place the ham or gammon in the Ninja Foodi pot, or the inner pot of the pressure cooker, Instant Pot.

Add the bay leaves, onion &amp; cloves, carrot,...

Add the bay leaves, onion &amp; cloves, carrot, peppercorns and star anise.

Add water to JUST cover the ham or...

Add water to JUST cover the ham or gammon. NB: Make sure the water DOES NOT EXCEED the maximum amount of liquid allowed - there is a mark in the inner pot that shows this.

Close the lid, move the steam pressure valve...

Close the lid, move the steam pressure valve to the seal position, and lock the lid.

Set to PRESSURE COOKING function setting. Select HIGH...

Set to PRESSURE COOKING function setting. Select HIGH and set the time for 60 minutes. (Allowing 15 minutes per 500g. 2kg = 60 minutes)

Press START.

When the cooking has finished, allow to release...

When the cooking has finished, allow to release the pressure slowly. Once it is safe to open the lid once the pressure has all been released, (some models will tell you this) open the lid.

If you are not serving the ham or...

If you are not serving the ham or gammon hot, I like to leave it in the cooking liquor, as it keeps it moist. If serving hot, lift out with tongs, drain and carve in slices to serve.
