Skinless Boneless Chicken Breasts

Preheat oven to 400° convection or 425° conventional.

Trim two skinless boneless chicken breasts of any trimmable fat.

Place the chicken in a ziplock bag and flatten the breasts to about 3/4 inches thick with a meat mallet or heavy pan.

If doing a brine, mix 2 cups of water with 2 tablespoons table salt. 15 minutes will give some results. 2-hour maximum.

You may use the seasoning you want. My suggested seasoning 1/2 teaspoon kosher salt, 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, and 1/4 teaspoon black pepper. Leave the salt out if you have brined.

Prep a small baking dish with a spray of PAM.

Pat dry the chicken. Melt 1 tablespoon butter in the microwave and brush both sides of the chicken. Apply your rub to your taste.

Bake in the preheated oven. It will take about 23-26 minutes and is done when the internal temperature is 165° in the thickest part of the breasts.

Allow to rest for 5 minutes before serving.

Roasted Rosemary Lemon Chicken Breasts

chicken breasts (skin-on, about 6 ounces each)

olive oil

Put the chicken breasts on a small rimmed baking sheet such as a 13 x 9 inch quarter sheet pan Drizzle with some olive oil. Turn the chicken over to coat on both sides with the oil.

Season the chicken on both sides with the salt. Let the chicken sit at room temperature 15 minutes, skin-side up. Strip the rosemary leaves from their branches and chop fine. Scatter the rosemary over the top of the breasts and rub into the skin. Arrange the lemon halves flesh side down around the chicken.

Meanwhile, heat the oven to 425 (220 C) degrees.

Roast chicken 12 minutes, then baste with some of the pan juices. Crank up the oven temperature to 475 degrees and roast and additional 15 minutes, or until the skin is golden brown and the pan juices are bubbling and dark brown. If your breasts are larger than 6 ounces they might need a few minutes more. Don’t overcook! (please).

Let the chicken rest about 5 minutes. Transfer to a serving plate and squeeze the roasted lemons over the chicken (one half per breast). Add a teaspoon of water to the baking sheet if necessary and scrape up the pan juices. Pour over the chicken and serve.

Roasted Chicken Breasts with Lemon, Garlic and Rosemary

chicken breast halves (2 whole breasts)

garlic (finely minced)

Early in the day (at least 4 hours in advance) mix the rosemary, garlic, salt, pepper, lemon zest, lemon juice and olive oil together in a small bowl. Rinse the chicken breasts and pat them dry. Press the rosemary mixture into the flesh of the chicken on all sides. Cover with plastic wrap and refrigerate for 4-8 hours

When ready to bake chicken, preheat the oven to 450˚F and put a rack in the middle position. I like to line my sheet pan with foil to make clean-up easy.

Place the chicken breasts on a shallow roasting pan skin side down. Roast for 15 minutes, then turn the breasts skin side up. Continue roasting until the breasts reach 160˚F* in the thickest part, another 15-30 minutes. If breasts vary greatly in size you may need to remove the smaller ones 5 minutes before the larger ones. Cover chicken with foil and allow to rest, loosely covered with foil, for 5 minutes before serving.
