Spice-Roasted Chicken With Caramelized Carrots and Shallots

2 1/2-to 3-lb. whole chicken

kosher salt

pepper

lemon

olive oil

cumin seeds

lb. small carrots, cut into 2-in. pieces

lb. medium shallots (about 8), quartered

Simple Roast Chicken flavored with garlic, butter and herbs, then oven roasted to a golden, crispy, and juicy perfection! 

Roast Chicken Recipe

chicken

butter, (melted)

garlic, (minced)

salt, (or to taste)

basil

thyme

lemon pepper black pepper)

lemon, (quartered)

rosemary

garlic, (peeled)

Preheat oven to 450˚F.

Remove giblets from inside of the chicken's cavity.

Thoroughly dry the chicken with paper towels.

Place chicken, breast side UP, on a rack set over a shallow roasting pan or jelly roll pan.

Brush chicken with melted butter.

Sprinkle or rub minced garlic all over chicken.

In a small bowl combine salt, basil, thyme, and lemon pepper; rub onto the chicken.

Add some salt to the inside of the cavity and fill the cavity with lemon slices, rosemary, and garlic cloves.

Tie the legs together with kitchen twine, and tuck the wings under the body of the chicken.

Roast, uncovered, for 10 minutes.

Reduce oven temperature to 350˚F and continue to cook until done; about 1 more hour and 10 minutes, or until internal temperature of chicken reaches 165˚F.

Remove from oven and baste the chicken with the juices.

Let rest for about 15 to 20 minutes before cutting.

Herb-Roasted Chicken and Cherry Tomatoes

bone-in chicken breasts (about 12 oz each)

salt

cherry tomatoes (halved)

sprig rosemary

fennel seeds (crushed)

c. polenta

red wine vinegar

c. parsley (chopped)

Heat&nbsp;oven to 450°F. Heat 1 teaspoon oil&nbsp;in large oven-safe skillet on medium. Season chicken breasts with 1/2 teaspoon each&nbsp;salt&nbsp;and&nbsp;pepper. Cook, skin sides down, until golden brown and crisp, 5 to 7 minutes.

Turn; add&nbsp;cherry tomatoes, rosemary&nbsp;and fennel seeds; drizzle with 1 tablespoon oil and season with 1/4 teaspoon each salt and pepper, then roast until chicken is just cooked through and tomatoes have begun to break down, 12 to 15 minutes.

Discard rosemary; transfer chicken to cutting board and let rest 5 minutes. Stir red wine vinegar&nbsp;into tomatoes, then toss with parsley. Remove bone from chicken, slice and serve on polenta. Top with tomatoes.

Super Easy Roast Chicken

(4 to 5-pound) whole chicken (packet of giblets removed)

Italian seasoning

kosher salt and black pepper (to taste)

Preheat the oven to 425°F (220°C), place a baking rack in the lower ⅓ of the oven, and bring the chicken to room temperature. Pat the chicken dry with paper towels.

Place the chicken breast side up in an oven-safe pan (I prefer cast iron). Truss the legs. Drizzle with oil and use your hands to rub it all over the chicken.

Season the chicken with salt, pepper, and Italian seasoning, patting the seasoning in with your hands.

Roast the chicken for 70 to 90 minutes, or until the juices run clear. Double check doneness with an instant-read thermometer placed in the thickest part of the thigh. It should read 165°F (74°C). Let the chicken rest for 15 minutes on a cutting board before slicing and serving.

ROAST CHICKEN | a super easy whole roast chicken recipe (the easiest!)

All you need are a few simple ingredients to make this tender and juicy Roasted Chicken recipe. Perfect for a Sunday night dinner or for entertaining guests!

Roasted Chicken

unsalted butter (melted)

black pepper

lemon (halved)

garlic (cut in half crosswise)

thyme (divided)

onion

Preheat oven to 450°F.

Pat the chicken dry with paper towels and place in a large roasting pan.

In a small bowl, stir together melted butter, oil, salt, and pepper. Gently loosen the skin on the chicken breast and thighs and rub the butter mixture under the skin and all over the outside of the chicken.

Squeeze the lemon over the chicken, and place the rinds in the cavity along with the halved garlic and 3 thyme sprigs. Using kitchen twine, tie the legs together. Place the onion slices and the remaining 3 sprigs of thyme around the chicken in the bottom of the pan.

Place the roasting pan in preheated oven and immediately reduce the temperature to 425°F. Bake until golden brown and a thermometer inserted in the thickest part registers 165°F, about 1 hour 15 minutes to 1 hour 30 minutes, basting with juices every 30 minutes. Let rest at room temperature for 15 minutes before carving. Serve with roasted onion and pan drippings.

Amazing Roasted Chicken  Recipe

This Whole Roasted Chicken recipe is simple, comforting, and so delicious. All you need are a few ingredients and a little time to make perfectly juicy, tender, and flavorful roasted chicken every single time.

The Best Roasted Chicken

carrot,

celery,

unsalted butter, melted

garlic, finely minced

head garlic, top sliced off

yellow onion,

lemon,

To a small mixing bowl add the melted butter, garlic, lemon zest, 1/2 teaspoon fresh thyme, and a generous pinch of salt and freshly cracked pepper.

Place the celery and carrots in a cast iron and skillet. Use a paper towel to pat the chicken dry and then place the chicken on top of the veggies, breast side up.

Rub the melted butter mixture under the skin of the chicken as well as inside the cavity of the chicken, being sure to use all of the butter.

Stuff the chicken cavity with the head of garlic, pieces of yellow onion, lemon, and fresh thyme. If you like, use a bit of kitchen twine to tie the drumsticks.

Drizzle the olive oil over the skin of the chicken and then use a basting brush to ensure that the skin is well coated with oil. Liberally season the chicken with salt and fresh cracked black pepper.

Place the chicken in the oven, on the middle rack, and roast for 1 hour and 15-30 minutes, basting every 30 minutes, or until the internal temperature, at the thickest part, reaches 165 degrees.

Remove the chicken from the oven and let rest for 10-15 minutes in the skillet.

Carve the chicken and serve with the pan drippings or reserve the pan drippings to make homemade chicken gravy.

Roasted chicken recipe is a simple yet delicious chicken dish, which can be prepared in a few minutes at the comfort of your home. Here’s how you can prepare this delicious recipe. Wash the chicken pieces and scoop out the stomach. Then wash it in the running water and drain out the excess water.

In the meantime, preheat the oven at 200 degree C. Then, take a small bowl and make the chicken marinade by using chilli, garlic, paprika, oregano, lemon zest, vinegar, oil, salt and pepper. Mix well to combine. You can add some spices and herbs as per your taste preference.

Grease/ brush the baking tray with some oil. Then, place the chicken on the baking tray and pour over the chilli mixture and spread it all over to coat the chicken. Ensure the mixture is well coated. Now place the chicken in preheated oven and brush it well with some oil. Once the chicken is well coated, let it cook for 45 minutes or till done. Keep checking the chicken and if you find it to be too dry, brush it with some more oil.

Remove from the oven, let it cool and garnish with chopped coriander leaves. You can also serve it with some creamy mashed potatoes, this will make it taste more delicious.
