This roasted garlic white bean dip has a secret ingredient: cottage cheese! It lends a super creamy texture and healthy protein boost to each bite.

Roasted Garlic White Bean Dip

(15 ounces) white beans

garlic

container (5.3 ounces) Muuna plain 2% cottage cheese

apple cider vinegar

extra virgin olive oil,

salt & pepper

Preheat oven to 400 degrees.

Roasted Garlic Dip is creamy and savory with bright flavors. Roasting the garlic creates a mild sweet and yet savory companion to the caramelized shallots. Lemon, chives and parsley brings in a brightness that makes this dip amazing as an appetizer and compliments veggies. 

Roasted Garlic Dip

garlic (*See Note 1 below)

shallots

olive oil

sour cream

mayonaise

black pepper

Worcestershire sauce

lemon zested

red chili pepper flakes

lemon juice

chives

parsley

Preheat oven to 400℉.

Cut garlic heads in half across the thickest part of the bulb and place into a sheet of aluminum foil with the cut side facing up.

Drizzle the cut side with olive oil and sprinkle with salt.

Wrap the garlic loosely with foil and bake for approximately 40 minutes or until golden brown and caramelized.

Remove from oven and let cool slightly. Remove the roasted garlic cloves from the skins by squeezing the cut head gently.

Roasting the Garlic

Cut the tops and bottoms off of the shallots and peel the skin.

In a small stainless steel or cast iron frying pan add approximately 1 tablespoon of oil and heat pan over medium heat. 

Once pan is heated add shallots and sweat for 3-5 minutes turning the shallots occasionally. Note: The shallots will begin to lightly caramelize. 

Remove from heat and add the shallot pan to 400℉ oven. Roast for 20-25 minutes or until golden and caramelized. Let cool slightly before making the dip.

Roasting the Shallots

To a food processor add the sour cream, mayonnaise, roasted garlic and shallots. Process until well combined, about 1-2 minutes. See Note #3 below.

To the garlic mixture add the black pepper, salt, Worcestershire sauce, lemon zest, crushed red chili pepper flakes and lemon juice. Process until well combined, about 1 minute.

Transfer mixture to a medium sized bowl and stir in finely grated parmesan, chives and parsley. Stir until well combined.Refrigerate until ready to serve, ideally 12-24 hours.

Assembly of Dip

Enjoy the sweet perfection of roasted garlic in this sour cream-based dip.  Grab your favorite potato chips, pretzels, or veggies for dunking in this game-day ready snack.

Preheat the oven to 400℉.

Remove the loose, outer papery skins from the heads of garlic.  Slice a thin layer (1/4 inch) off of the top of the garlic, exposing the cloves.   The whole head of garlic should remain intact. 

Drizzle the olive oil over the cut surface.  Wrap each head of garlic in aluminum foil and roast for 40-60 minutes.  Start checking the garlic for doneness after 40 minutes and continue roasting until soft and golden brown.  (When squeezed, the cloves should easily come out of the skins.)

Once the garlic is cool enough to handle, squeeze the roasted garlic from the skins.  Chop or smash and add to a mixing bowl with the remaining ingredients.  Stir to combine.

Refrigerate the dip overnight in an airtight container.  Serve with potato chips, pretzels, or veggies.  Refrigerate leftovers for up to 5 days.

Going to a family party in a few days and made this so the flavors could marry.  I swiped some though...you know...taste test and quality control. Its fantastic!
