1.2l beef or lamb stock

Using a sharp pointed knife, make at least 30 small incisions all over the leg of lamb.

Take 4 cloves from 1 bulb of garlic, peel and thinly slice them, then prod a slice into each incision. Next, take 1 bunch of rosemary, pull off small sprigs and push into the incisions, too.

If done in advance, cover the leg of lamb well and refrigerate. Remove from the fridge 1 hr before roasting.

Heat oven to 190C/170C fan/gas 5. Heat a large frying pan, add 1 tbsp vegetable oil and brown the leg of lamb all over.

Scatter 2 carrots, cut into large chunks, 1 quartered onion, the remaining garlic and rosemary in a large roasting tin, pour in 1 glass of red wine and 1.2l beef or lamb stock, then place the browned lamb in the tin.

Roast for about 1 hr 45 mins. Turn the leg of lamb halfway through so by the time it’s cooked, each side has been in the stock.

A lamb roast fit for a weeknight. It's hard to resist when served with green beans, olives and tomatoes. So don't.

This roasted Rack of Lamb recipe is elegant and sure to impress, plus you won&#039;t believe how easy it is! It&#039;s a delicious one-pot-meal that includes a bed of roasted garlic rosemary potatoes.

Rack of Lamb with Garlic Rosemary Potatoes

frenched lamb racks* (, about 1 1/2 pounds each)

Salt and pepper

Tablespoons olive oil (,

potatoes

parsley

Extra virgin olive oil (,

Dijon mustard

garlic (, cloves

extra virgin olive oil

Tablespoons fresh chopped rosemary (, divided)

Bring lamb to room temperature: Remove the lamb racks from the fridge and season them all over with kosher salt and freshly cracked black pepper. Allow the meat to come to room temperature, about 30 minutes to 1 hour.

Meanwhile, parboil the potatoes. Add potatoes to a large pot of cold, salted water. Cook over medium heat until tender, about 15-20 minutes. Drain potatoes and place on a large baking sheet*.

Make Lamb Marinade: Add Dijon mustard, garlic cloves, ¼ cup olive oil, and 2 tablespoons rosemary leaves to a food processor and process until finely chopped and combined.

Heat the oven to 425 degrees F and place oven rack on the top ⅓ of the oven.

Sear Lamb Racks: Heat a large cast iron pot over medium-high heat. Add 2 tablespoons olive oil to lightly coat the bottom of the pan. Once hot, add lamb racks, fat side down first. Sear for 1-2 minutes on each sides.

Smash Potatoes: Use the back of a spoon to gently smash the potatoes flat. Drizzle them with 1-2 tablespoons extra virgin olive oil, and season with a little kosher salt and pepper. Sprinkle remaining 1 tablespoon rosemary over potatoes.

Prepare to Roast: Lay the seared lamb racks on top of the potatoes*, with the bones curving downwards (fat side up). Optional, wrap the exposed end of the rib bones in foil, for a prettier appearance when serving. Spoon the lamb marinade over the lamb racks.

Roast, uncovered, for 15-25 minutes, until a meat thermometer registers 120-130 degrees F for rare, or 130-140 degrees F for medium rare. I suggest removing from oven when it reaches 5 degrees below your desired temperature, since the meat will continue to cook as it rests.

Rest: Remove lamb to a cutting board and tent with foil. Allow to rest for 15 minutes before serving.

Crisp Potatoes: Return potatoes to oven and roast for 10 more minutes, until crispy.

To serve, cut the lamb in between the bones and transfer to a serving platter with the potatoes. Sprinkle with fresh parsley. Serve 2-3 chops per person.

Air Fryer Boneless Lamb Shoulder Joint is quick to cook and super easy to carve. I&#39;ve included instructions to make a delicious simple gravy from the lamb juices and step-by-step instructions to air fry and rest this rolled lamb shoulder roast to perfection.

Air Fryer Boneless Lamb Shoulder Joint Recipe

750 g Boneless Shoulder of Lamb

tbsp Vegetable Oil

tsp Sea Salt Flakes

Water

tbsp Cornflour (Cornstarch)

Flakes

If your air fryer requires pre-heating, start this setting now.

Thoroughly dry a 750g Boneless Shoulder of Lamb .

Drizzle the lamb with roughly 1 tbsp Vegetable Oil and 2 tsp Sea Salt Flakes. Rub into the lamb so it is evenly distributed all the way round and not forgetting the ends.

Place the lamb into the air fryer basket. If it is a preheated basket, use 2 forks or tongs to lower the meat in so you don&#39;t touch the hot metal with your hands.

Air fry for 20 minutes at 190℃/375℉.

Turn the lamb over fully.

Air fry for a further 15 minutes at 190℃/375℉ for medium. Add 5 minutes for medium-well and a further 5 for well done.

Take the lamb out the air fryer and wrap well in foil.

Remove the plate and tip the rest of the juices into a small saucepan. Use a silicone spatula to make sure you get all the goodness. Scrape any tasty bits off the crisper plate too.

Allow the lamb to rest for at least 10, but ideally 15 minutes. Use this time to make the gravy.

Don&#39;t forget to add any juices from the resting period to the gravy.

Remove the string then carve into thick or thin slices as preferred and serve.

If there is a lot of lamb fat vs juices, remove some of the fat and discard or save this for another time.

Tip all of the drained lamb juices and some fat into small saucepan and start heating over a high heat.

Add 300ml Water to the pan. Freshly boiled from the kettle will speed up the process.

Mix 3 tbsp Cornflour with roughly 3 tbsp Water until all the cornflour has dissolved.

Once the juices and water have come to the boil, add the cornflour slurry with one hand while whisking with the other.

Continue to boil until the gravy is thickened. If after a few minutes, it is not thick enough for your liking, make up and add more cornflour slurry - add a little at a time. If it is thicker than you would like, add a little water at a time.

Taste the gravy and add Sea Salt Flakes a little at a time until the gravy is flavoursome. Don&#39;t be shy, salt is your friend with gravy.

Serve with the sliced lamb.

To Make The Lamb Gravy

I don’t cook lamb often but thought I would this Sunday as a treat. We absolutely loved it!

Easter Rack of Lamb (Dijon Herb Crust)

Make the herb crust. In a small bowl, mix the mustard, garlic, rosemary, thyme, parsley and lemon zest. Set aside.

Season the lamb. Remove the lamb from the fridge 30 minutes before cooking. Pat dry with paper towels. Preheat the oven to 425°F (220°C). Season both racks generously on all sides with salt and pepper.

Sear the lamb. Heat the oil in a large oven-safe skillet over medium-high heat and sear the lamb fat-side down for 2 to 3 minutes, until golden. Turn and sear the meat side for 1 to 2 minutes. Depending on the size of your skillet, you may have to sear in batches.

Coat the lamb. Brush the herb mixture evenly over the meat side of both racks (avoid the bones).

Roast the lamb. Arrange the lamb fat-side up in the skillet or on a baking sheet and roast for 18 to 22 minutes for medium-rare (125-130°F). If you&#39;d like a more golden top, you can broil in the last 1 to 2 minutes of cooking.

Rest, slice and serve. Remove from the oven and let rest for 5 minutes. Slice between the bones into individual chops and serve immediately.

We made this recipe for our Easter dinner,  lamb was tender and the crust was absolutely delicious! The Dijon really compliments the lamb.

Delicious! Any mustard will do…just depends on your taste buds!

I made the rack of lamb with the Dijon Herb crust for the first time.  I usually do a leg of lamb for Easter.  It did not disappoint!  The lamb was tender and delicious!  My son told me we can have this for every Easter.
