Roasted Strawberry Almond Flour Muffins

strawberries

cooking spray

almond flour

gluten-free oat flour

baking powder

unsalted butter (room temperature)

Preheat oven to 375°F. Set the rack in the center.

Toss strawberries with 2 tablespoons of the sugar.

Place on parchment paper-lined sheet pan in a single layer and roast 25 minutes, until the strawberries release their liquid and caramelize.

Roast the strawberries:

Meanwhile, line a muffin tin with 12 muffin nonstick liners and spray with oil.

Mix almond flour, oat flour, baking powder and baking soda with a whisk in a medium bowl.

In a large bowl with a hand mixer, mix and cream the butter and sugar on medium setting for about 2 minutes.

In a small bowl, beat the egg whites and vanilla with a whisk, add to bowl with butter/sugar mixture.

Mix in the yogurt, then flour mixture and mix on low speed until combined, 1 minute.

With a spatula, fold in the strawberries and spoon to lined muffin tins about 3/4 filled (I used an ice cream scoop).

Bake at 375F or until a toothpick inserted in the center comes out clean, about 18 to 20 minutes.

Let cool before eating.

Strawberry Cheesecake Ice Cream is bursting with so much fruity, tangy flavor. It tastes like you turned the best strawberry cheesecake ever into a scoop of ice cream. HEAVEN!

Strawberry Cheesecake Ice Cream

strawberries,

granulated sugar, (divided)

balsamic vinegar

cream cheese, (at room temperature)

milk

heavy cream

lemon juice

corn syrup

fine sea salt

graham crackers, (chopped)

Preheat the oven to 300°F. Line a large rimmed baking sheet with parchment paper or a silicone baking mat.

Toss the strawberries with 1/4 cup sugar and the balsamic vinegar. Spread strawberries into one even layer on the prepared baking sheet and roast for about 30 minutes, or until the strawberries have darkened in color, are soft, and their juices have released. Transfer the strawberries and juices to a medium bowl and mash until only small pieces of fruit remain. Cover and refrigerate the strawberries until chilled, about 1 hour.

Meanwhile, in the bowl of a blender or food processor, puree the remaining ice cream ingredients, except the graham crackers, until smooth. Transfer to a medium bowl and press plastic wrap against the surface. Chill in the refrigerator for at least 30 minutes, or up to 1 day.

Pour the mixture into an ice cream maker. Freeze according to the manufacturer’s directions. During the 5 last minutes of freezing, gradually add the roasted strawberries and graham crackers.

Transfer the ice cream to an airtight container, press plastic wrap against the ice cream, and freeze until firm and flavor is ripened, at least 2 hours.

This recipe for Vanilla Roasted Strawberries is quick, easy, and delicious. Fresh in-season strawberries are combined with sugar and vanilla bean, then roasted until the strawberries are jammy and the juice is bubbly and syrupy. Serve over ice cream, yogurt or waffles.

Roasted Strawberries with Vanilla Bean

(100 grams) granulated sugar

vanilla bean (replace

(15 ml) fresh lemon juice

Preheat the oven to 400°F for 15 minutes. Time will vary depending on your oven brand. Line a half-baking sheet (18x13-inches or similar size) with parchment paper.

Place the sugar in a small bowl. Lay the vanilla bean flat. Look for the rougher, matte side – this is where the bean naturally splits open and where you want to cut. Hold the tip of the bean down with your finger. Using the sharp tip of a paring knife, carefully cut lengthwise down the center of the bean, following the matte side. Don't cut all the way through! Leave the end intact so the bean unfolds like a book.

Use the blunt back of the paring knife to scrape the fragrant vanilla bean seeds from the bean gently. Add the vanilla bean seeds to the sugar. Use your fingers to rub the vanilla seeds into the sugar until they are distributed throughout the sugar.

Combine the sliced strawberries, lemon juice, and 1/2 cup of the vanilla sugar in a large bowl. With a large spoon gently mix all the ingredients together. Spread the mixture on a half-sheet pan and place in the oven.

After the first 10 minutes, stir the berries and return the pan to the oven.  Continue to roast the strawberries, stirring them every 10 minutes until the strawberry syrup starts to thicken and bubble at the edge of the pans. Total cooking time should be about 30 minutes.

When done, remove them from the oven and immediately scrape the strawberries and juice into a large bowl using a large heatproof spatula.  Be careful, the pan and the strawberry syrup are hot.   You have to do this step immediately because as the syrup cools it will harden and stick to the pan.

Allow the berries to cool until room temperature.

Refrigerator: Once the strawberries are cooled to room temperature, store them in the refrigerator in an airtight container for up to 2 weeks.
