Healthy, light and refreshing Persian Shirazi salad with cucumber and tomato is a simple salad packed with herbs and tossed in an olive oil and lime dressing. 

Persian Shirazi Salad with Cucumber and Tomato

tomatoes (about 3-4 Roma tomatoes

small cucumbers (about 2 small Persian cucumbers), diced

onions, diced

tablespoon olive oil

tablespoon lime juice

parsley

mint

salt

black pepper

Dice the tomatoes, cucumbers and onions into small 1/4-inch pieces. Transfer to a medium bowl.

Add olive oil, lime juice, parsley, mint, and salt and pepper. Toss to combine.

Serve immediately, or cover and place in the refrigerator and chill for at least 30 minutes to allow the flavours to infuse together more.

Shirazi salad is a Persian cucumber tomato salad that&#039;s easy to prepare and packed with flavors. This classic Persian salad can be served with any main dish. 

Shirazi Salad (Persian Cucumber Tomato Salad)

Persian cucumbers

Red Onion

Tomatoes

Lemon Juice or verjuice (see notes)

tbsp Dried Mint

Salt

tsp Black Pepper

Chop the cucumbers, onion and tomatoes into very small pieces.

Mix them in a bowl and add the lemon juice or verjuice.  

Add in dried mint, salt and pepper. Toss to combine the salad with the dressing. Taste and add more salt or verjuice if needed.

Chill in the fridge for 30 minutes to 1 hour and then serve.

This was such a quick and easy recipe that does not disappoint! Light, fresh and delicious; definitely, a new favorite recipe!

This salad was so light and refreshing. I know it will be a go-to this summer for a simple side or something refreshing for the pool or beach.

My way to get the closest  substitute for ab-e limoo is by mixing fresh lemon juice  with some bottled lime juice (Real lime).  This flavour/smell brings me right back to Shiraz where I lived for 3 years.

I managed to get some good tomatoes at the grocery store even though it's winter so I made this salad and it was SO good! Perfect side dish.

Delicious  I did not have red onion so used some fresh green onions from my garden.  WOW, also used lime juice as in notes.  THANK YOU.  I always have lots of cucumbers, onions, and mint in my garden so will be making this again.

Made this today and will serve with chicken skewers marinated in yogurt and bloomed saffron.
