salmon curry recipe

This recipe makes a double batch of the fragrant curry sauce, so you can pop half in the freezer. Cook the rest with prawns, spinach and salmon for a healthy weeknight dinner.

Spinach, tomato, prawn and salmon curry

For the sauce

sunflower oil

red onions,

ginger

garlic

tsp turmeric

tbsp cumin

tsp coriander

tomatoes,

curry leaves (available in Tesco or Asian grocers)

x coconut milk

lime

Heat the oil in a frying pan over a low heat. Add the onion, season and cook for 10 minutes until softened.

Whizz the ginger, garlic and chilli in a small blender until finely chopped. Add to the onion with the ground spices. Fry for 3-4 minutes.

Add the tomatoes and curry leaves, bring to the boil and simmer for 6-7 minutes. Pour in the coconut milk and lime juice, then bubble over a medium heat for 8-10 minutes.

Pour half the sauce into a plastic container. Cool completely and seal, then freeze for up to 3 months.

Add the spinach to the rest of the sauce. Simmer for 2-3 minutes until wilted, stirring constantly. Add the prawns and salmon and cook for 3-4 minutes or until the prawns are pink. Stir gently or the salmon pieces will break up. Serve with steamed basmati rice and lime wedges.

Salmon gets an Asian flare in this coconut curry salmon recipe. Spicy with lots of flavor. It makes a simple weeknight or company meal in just 30 minutes. 

Coconut Curry Salmon

onion, thinly sliced ((about 1 cup 52 grams))

(118 milliliters) unsweetened coconut milk

cilantro

(60 grams) baby spinach, fresh ((optional))

(0.45kg) salmon fillets, skin removed ((2-3 fillets))

garlic ((1 clove

SAUTE:  Heat oil in skillet to medium high. Add onions and saute for 5 minutes, stirring occasionally. Add garlic, ginger and all seasonings. Stir and saute until fragrant for anther 2 minutes.

ADD LIQUIDS AND SIMMER: Add diced tomatoes with juices, coconut milk and cilantro.  (If using whole tomatoes, crush by hand). Bring to boil, then lower to medium and simmer, uncovered for 8-10 minutes until slightly thickened.  Add spinach if using and stir until wilted, 1 minute.

POACH SALMON: Add salmon and cover it with sauce. Cover skillet and simmer on medium low for 5 minutes. Then turn off heat and let it sit for 5 minutes to finish cooking. Tip: If salmon is not an even thickness, the thin part will cook more quickly, so cut that off and add the thin part for just a few minutes toward the end of cooking. Note 1. Serve in bowls over rice, pasta or quinoa.

Easy Creamy Salmon Curry

tbsp butter

onion (finely chopped)

tbsp Garam Masala

½ tsp ground cardamom

turmeric

½ tsp ground coriander

paprika

½ tsp black pepper

tomato paste

(400 grams/14 ounces) coconut milk

stock

salmon

olive oil

½ tsp pepper

Preheat the oven to 220°C/430°F

In a large, deep pan or pot set over medium heat, melt the butter and add the onion.

Cook for a few minutes until soft and translucent. Add the garlic and ginger and cook for 30 seconds.

Add all the spices and cook for a minute until the pan looks dry and smells aromatic.

Stir the tomato paste in and cook for another minute then pour in the coconut milk and stock.

Season the sauce with salt and pepper then reduce the heat and allow to simmer for 10 minutes until the sauce is slightly reduced. 

Slice the salmon fillet into the bite-size chunks and pat dry with paper towel. Place on a sheet pan lined with parchment paper.

Drizzle over the oil and season generously with salt and pepper. Place in a hot oven and allow to roast for 5-7 minutes until the salmon is firm but not fully cooked.

Remove from the oven and set aside.

Once the sauce has reduced slightly, add the salmon to the sauce and allow to simmer for another 5 minutes until the salmon is just cooked but still juicy.

Adjust seasoning and add lemon or lime juice then garnish with fresh cilantro/coriander.

Serve with rice, naan bread or roti.
