This salmon pesto pasta recipe comes together fast and makes an elegant meal that&#039;s great for a quick weeknight dinner. You can either use jarred or homemade pesto.

Salmon Pesto Pasta

Boil a salted pot of water for your pasta and cook it al dente according to package directions.

Sprinkle the salmon with the garlic powder and some salt &amp; pepper. Coat it in flour on all sides.

In a skillet, heat the oil and butter over medium-high heat. Cook the salmon for about 3 minutes/side until lightly golden.

Take the pan off the heat. Remove the salmon to a plate and set aside. Pour the fat out of the skillet, but leave the nice browned bits that are stuck on the bottom of the pan (don&#039;t wipe the pan out).

Add the chicken broth and pesto and return the pan to the burner. Cook for about 30 seconds while scraping up the brown bits from the bottom of the pan.

Add in the cream and lemon juice and let the sauce bubble for about a minute. Add the salmon back in and break it into pieces with your spoon. Reduce the heat and let it gently cook for another 5 minutes or so (the sauce will thicken up as well).

Drain the pasta and toss it with the sauce. Serve immediately with freshly grated parmesan cheese if desired.

Preheat oven to 400 degrees F and place the salmon filet on a foil-lined, rimmed baking sheet. Drizzle it with the olive oil and lemon juice, then sprinkle it lightly with kosher salt and black pepper. Roast salmon for 12-14 minutes. For a slightly crispy top, move the baking sheet to the top rack and turn the oven to broil for the last 1-2 minutes of cooking time, but watch it closely. Remove salmon when done and set aside.

While salmon cooks, bring a large pot of well-salted water to a boil. Cook pasta to al dente according to package directions. Reserve a bit of the pasta water in case you want it to loosen the sauce, then drain.

Return drained pasta to the pot and add pesto, Parmesan, and a pinch of black pepper. Stir well to combine. If you prefer a looser sauce, stir in reserved pasta water a splash at a time until it reaches your desired consistency. Taste and adjust seasoning as desired (you may want to add a pinch of salt or a squeeze of lemon juice, for example.)

Using a fork, break up the cooked salmon into bite-sized pieces. Either mix into the pasta in the pot, or serve the pasta and top with salmon separately. Enjoy!
