<em>Salted caramel turtle brownies are deliciously rich with homemade salted caramel and pecans!</em>

Salted Caramel Turtle Brownies

(12 Tbsp; 175 grams) unsalted butter

(113 grams) semi-sweet chocolate bar, coarsely chopped*

(400 grams) granulated sugar

eggs,

vanilla extract

(85 grams) unsweetened natural or dutch-process cocoa powder*

(125 grams) all-purpose flour (spoon & leveled)

salt

(120 grams) chopped pecans

cup (180 grams) semi-sweet chocolate chips

(full recipe) homemade salted caramel

Preheat the oven to 350°F (177°C). Line a 9&#215;13 inch pan pan with parchment paper, leaving an overhang on the sides to lift the finished brownies/caramel out of the pan as a whole. This makes cutting easier. I recommend parchment paper because the caramel won&#8217;t really stick to it.

In a microwave-safe bowl, combine the butter and 2 ounces of chopped chocolate. Melt in 30 second increments, whisking after each, until completely smooth. Whisk in the sugar until completely combined, then whisk in the eggs and vanilla. The batter will be light brown and a little dull looking.

Add the cocoa powder, flour, salt, remaining 2 ounces of chopped chocolate, pecans, and chocolate chips. Fold it all together with a rubber spatula or wooden spoon. Batter will be very thick. Spread evenly into prepared pan.

Bake for 30 minutes, then test the brownies with a toothpick. Insert it into the center of the pan. If it comes out with wet batter, the brownies are not done. If there are only a few moist crumbs, the brownies are done. Keep checking every 2 minutes until you have moist crumbs. My brownies take 31-32 minutes.

Remove from the oven and pour slightly cooled salted caramel on top of hot brownies. Spread it evenly on top. If desired, and if you like very salty/sweet, sprinkle top with coarse salt. Place the pan on a wire rack to cool completely before cutting into squares. I like to stick the pan in the refrigerator to speed things up.

Cover and store leftover brownies at room temperature for up to 1 week.

these were SO. GOOD. the salted caramel sauce is delicious and the chunks of pecan in the brownies really make them. the only thing is the caramel sauce can get a little hard, but if you microwave the brownie for about 15 seconds before you eat it, and ESPECIALLY if you eat it with a little vanilla bean ice cream... earth-shattering

These brownies were so good! My 12 year old daughter made these. I was surprised at how well she did with making the caramel. I just helped her follow the directions exactly and it turned out great.

Take indulgent, fudgy chocolate brownies to the next level with a layer of salted caramel running through the centre of each bite.

Salted caramel brownies

unsalted butter,

chocolate, 70% cocoa solids

chocolate, 50% cocoa solids

can caramel

golden caster sugar

plain flour

cocoa powder

Grease then line a 23cm square traybake tin with baking parchment.

Melt 200g unsalted butter in a medium pan, break in 100g chocolate (70% cocoa solids) and 100g chocolate (50% cocoa solids), then remove the pan from the heat and wait for the cubes to melt.

In a small bowl, mix 175g caramel from a 397g can with 1 tsp sea salt – it will loosen up.

Put the rest of the caramel in a large bowl with 200g golden caster sugar and 4 medium eggs, and beat with an electric hand mixer or balloon whisk until even. Whisk in the chocolate and butter.

In another bowl, combine 130g plain flour, 50g cocoa powder and a good pinch of table salt, then sift this on top of the chocolate mix. Beat briefly until smooth.

Pour half the brownie batter into the tin and level it with a spatula.

Using a teaspoon, spoon half of the salted caramel on top of the batter layer in 5 thick, evenly spaced stripes.

Spoon the rest of the brownie batter on top and smooth it out, trying not to disturb the caramel beneath. Top with the rest of the caramel in the same stripy fashion. Drag a skewer or tip of a knife through the caramel to make a feathered pattern on the top.

Scatter with a little more sea salt, then bake for 25-30 mins or until risen all the way to the middle with a firm crust on top. When ready, the brownie will jiggle just a little when you shake the tin.

Let it cool completely in the tin, then cut into squares.

No-Bake Caramel Brownies

dates ((soaked in hot water, if they're dry))

tsp vanilla extract (or vanilla bean)

+ 1 Tbsp flaxseeds

peanut butter (or almond flour)

maple syrup (or a different liquid sweetener)

coconut milk

sugar coconut sugar)

dairy-free chocolate chips (or dark chocolate (chopped))

coconut oil

First, process the whole flax seeds into a floury consistency in an electric coffee/spice grinder or small blender jug.

Then, mix all the dry ingredients in a food processor, before adding the dates and vanilla extract.

Process again until it forms a dough that sticks together when pressed between your fingers. This can take a few minutes. If it&#39;s still too dry, add more dates or a small amount of maple syrup.

Next, line a 6-inch square baking pan (double the recipe for an 8 or 9-inch pan) with lightly greased parchment paper, leaving a 2-inch overhang on both sides. Transfer the dough to the prepared baking dish, pressing it down into an even layer.

Brownie Layer

Transfer the caramel ingredients to a saucepan and bring to a boil, then immediately reduce to a simmer and whisk often, for 10-15 minutes, until the mixture thickens.

Pour the caramel layer over the brownie base and transfer it to the freezer for 30 minutes.Alternatively, make an even healthier date caramel sauce. The full ingredient amounts and instructions are in the recipe notes.

Caramel Layer

Use a warm water bath or double boiler (a bowl set over a pan of simmering water) to melt the chocolate and coconut oil. Stir until smooth and melted.

Pour that over the caramel layer and return to the freezer for 5 minutes.

Finally, cut the vegan brownies into bars (using a hot knife is best), and enjoy!

5 stars on flavor!! Wow this was truly delicious! 
First, it was easy to make.   
As I was making this, I had a bite of the brownie layer and was concerned bc on its own it wasn’t that great but once all the layers came together, it was truly delicious!  My boyfriend is a tough critic, a super foodie, and he had 3 servings bc he couldn’t stop eating it!  
My ONLY issue is that the caramel oozes out especially while cutting it.  So it was a bit messier than expected.   But I’ll definitely make it again!  It’s going on my list of favorites!

I made these for a baby shower, I’m vegan and some of the other ladies are.  They were a huge hit!  I made the date caramel and it was delicious.  Making them again today, just because. 😁

My God, these are delicious! And so easy to make. Used flour made from oats instead of almonds or Peanuts as I did not have anything else, worked just fine. I think it's unnecessary to freeze them, as we'll have finished them very quickly :-)

I made these and they were delicious!  I made the coconut sugar version; they were a little too sweet for me so what I did is to cut them as little bite pieces and topped them with almonds; everybody loved them! I'm planning to make the healthier version (with dates) next time. Thanks! Awesome!

 Preheat oven to 350. Line a flat plate with parchment paper and coat with cooking spray. Line an 8&#215;8 square baking pan with parchment paper and coat with cooking spray.

Make that caramel

place the sugar in a small saucepan over medium high heat. Stir frequently &#8211; the sugar will form clumps and eventually become smooth. Remove from heat. Add butter and stir in. Add cream and stir in. Return to heat &#8211; let it get smooth and bubbly for another few minutes. Pour the caramel on the parchment-lined plate. Freeze for 20-30 minutes to solidify.

Brownie time

Melt the chocolate and the butter (microwave or double boiler). Whisk in the sugar. Whisk in the eggs and vanilla. Whisk in the flour and salt.

Caramel meets brownie

Cut the cooled caramel into small squares. Stir most of them into the brownie batter and transfer to the pan. Arrange the last few caramel pieces on top of the brownies. Bake for 30 minutes (more or less to taste). Cool in the fridge or freezer for easier cutting. FALL IN LOVE!
