Schezwan Fried Rice | How To Make Schezwan Rice

rice (uncooked (any premium quality))

onions (or onions)

carrots (fine chopped (1 small) (optional))

french beans (fine chopped (4 medium)(optional))

capsicum (chopped or (½ bell pepper))

ginger (chopped)

garlic

onion (chopped finely)

celery (chopped finely (optional))

soya sauce

tomato ketchup

vinegar

red chili powder

sugar

salt

pepper

water

Schezwan fried rice | How to make schezwan rice

Wash rice and soak for 20 to 30 mins. Bring 6 cups water to a boil.

When the water begins to boil rapidly, then add rice and 1 teaspoon oil. Cook on a medium high flame till al dente.

Al dente rice is firm but fully cooked. Make sure rice is not over cooked.

When the rice is cooked al dente, drain it to a colander. 

While the cooked rice cools completely, chop the vegetables.

Preparation

Pour oil to a hot wok. Fry ginger &amp; garlic till they smell good.

Next add onions and fry until golden.&nbsp;

Skip this step if you have the sauce ready. Stir in red chili powder with water. Add this to the pan along with soya sauce, vinegar, ketchup, sugar, salt and schezwan pepper. Cook until it thickens. Pour 3 tbsps more water and cook till it thickens, Remove to a bowl. To the same pan, add 1½ tablespoon more oil. 

On a high flame, fry spring onion whites, carrots, beans &amp; capsicum until half cooked yet crunchy.&nbsp;

Next add Schezwan sauce, cooled rice and spring onion greens.

Mix and stir fry schezwan rice for 2 minutes. Taste test and adjust salt and spice if needed.

Serve schezwan fried rice hot or warm with any Indo chinese side.

How to make schezwan fried rice

This veggie- and flavor-packed Schezwan fried rice recipe is incredibly easy to make! I’ve simplified this Indo-Chinese dish to be a lot quicker without sacrificing an of its amazing, complex flavor.

Schezwan Fried Rice (Indo-Chinese)

white basmati rice

quinoa (or you can use more white basmati rice)

water (or stock)

garlic (minced)

ginger (minced)

chili

red onion

carrots

chopped bell peppers

cabbage

green onion (Use the whites of the green onions and reserve the greens

cilantro

ketchup

soy sauce (, use tamari for Glutenfree)

Kashmiri chili powder (or use paprika)

ginger-garlic paste

white pepper (or more, to taste)

black pepper

green onions

Wash the rice and quinoa, then add to a saucepan. Add the stock and a pinch of salt, then cover with a lid over medium heat. Once the stock has come to boil, reduce the heat to medium-low and continue to cook for another 9 to 10 minutes, or until the rice and quinoa are both cooked to preference.

Fluff them really well, and set them aside until you need them for the fried rice. Or use 2-2.5 cups of cooked grains of choice.

Prepare the rice-quinoa mixture.

Heat the oil in a large skillet on medium-high heat. Add the minced ginger, garlic, and green chili to the pan and mix well. (I use a food processor/chopper to mince the garlic ginger and chili together). Cook until they are starting to turn translucent, then add in the onion, carrots, and a good pinch of salt, and cook for 2 to 3 minutes. Then add in the peppers, cabbage, cilantro, and salt and toss well. If you want to use more veggies, you can also add in some frozen veggies at this point and toss well.

Cook for a minute, then mix in all of the sauces and the spices. Bring the mixture to a boil,1-2 mins, then add in the cooked rice-quinoa mixture, tossing well to mix it in with all of the sauces. If it is drying out too much, add in some splashes of water to help mix everything in, then switch off the heat, cover the pan, and let it sit for the flavors for meld for about 2 minutes.

Open the pan and fluff the Schezwan rice again. Garnish with the green onion and some black pepper, if you like, and serve.
