Cazuela de mariscos (seafood casserole) is a delicious traditional dish of the Caribbean region of Colombia that is prepared with seafood, fish and vegetables.

Soak the clams in fresh water for 20 minutes. This will get rid of the salt water and sand they contain.

Remove them from the water but do not put them in a colander as the sand contained at the bottom of the container could fall on clean clams.

Then, use a brush to scrape the shells to remove the last traces of sands and marine residues that would have remained attached.

Clean the squid. Remove the thin brown film covering them. Empty them and remove the transparent cartilage. Cut the beak in the head and rinse well. Slice and pat dry with paper towels.

In a large pot, heat the olive oil and butter over medium heat.

Add the scallion, garlic, red pepper, green pepper, celery and carrots and sauté until tender and translucent (about 10 minutes), stirring regularly. Season with salt and pepper.

Add the cream, water, cubes of fish broth, coconut milk, and sprig of thym, then bring to a boil.

Add all the seafood and cover.

Cook for about 2 minutes over medium heat until the clams are open.

Remove from heat.

Add the tomato paste and the wine, and mix well.

Simmer for 15 minutes over low-medium heat.

Garnish with cilantro and parsley and serve hot.

fish fish stock cube

new potato, halved

mace

cayenne pepper

pack fish pie mix (salmon, haddock and smoked haddock)

tbsp single cream

pack cooked mixed shellfish

Heat the oil in a large saucepan over a medium heat, then add the onion and bacon. Cook for 8-10 mins until the onion is soft and the bacon is cooked. Stir in the flour, then cook for a further 2 mins.

Pour in the fish stock and bring it up to a gentle simmer. Add the potatoes, cover, then simmer for 10-12 mins until the potatoes are cooked through.

Add the mace, cayenne pepper and some seasoning, then stir in the milk.

Tip the fish pie mix into the pan, gently simmer for 4 mins. Add the cream and shellfish, then simmer for 1 min more. Check the seasoning. Sprinkle with the parsley and serve with some crusty bread.

A low-fat seafood stew that tastes anything but, and all ready in 30 minutes too

Heat the oil in a large frying pan and cook the onion and celery until soft but not coloured, about 10 mins. Throw in the garlic and cook for 1 min more. Pour in the wine and simmer on a high heat until most has disappeared.

Pour in the stock and cornflour mix and simmer for 5-10 mins, stirring often until thickened. Season, then add the seafood and most of the dill. Simmer for a few mins until piping hot, then stir in the crème fraîche.

Meanwhile, cook the garlic bread following pack instructions. Divide the stew into warm bowls and scatter with the remaining dill. Serve with garlic bread for dipping into the stew.

One of my favorite seafood dishes is my Baked Seafood Casserole. Loaded with fresh flounder, shrimp, sea scallops, and crab meat, every bite is full of flavor and seafood!

Baked Seafood Casserole

flounder

x-large shrimp

scallops

crab meat

tbsp butter

chicken broth

tbsp dijon mustard

garlic powder

onion powder

¼ tsp black pepper

½ tsp Old Bay (optional)

Add two tablespoons of butter to a large skillet over medium-high heat.

Melt the butter and add the shrimp and scallops to the hot pan. ( you can substitute olive oil for the butter for sauteing the seafood)

Saute the shrimp and scallops for about a minute, just long enough to sear the outside of the seafood.

Add a splash of white wine to deglaze the pan, then add the heavy cream, chicken broth, dijon mustard, and seasonings to the pan.

Saute the mixture for one minute, then remove the shrimp and scallops from the pan. Set aside until needed.

Add two tablespoons of butter dredged in flour (beurre manie) to the seafood sauce. This will thicken the sauce.

Let it simmer over low heat to thicken the sauce.

Remove the pan from the heat and add the scallops, shrimp, and crab meat to the sauce. Mix until seafood is coated and set aside until needed.

Place the flounder fillets in the bottom of a casserole dish. Add a little water to the dish and sprinkle with old bay seasoning

Bake the flounder for 10 minutes at 350° F.

Drain the water off the flounder.

Add the seafood mixture to the casserole dish. Sprinkle with old bay seasoning and bake for 25 minutes at 350° F until golden brown.

This seafood casserole is full of shrimp and scallops so it’s a seafood lover’s delight. Perfect for Lent.

heavy cream ((or up to 3/4 cup))

Swiss cheese

tbs grated Parmesan

Paprika

Sea salt and pepper

Preheat oven to 375 degrees F.

Spray a glass or ceramic 7 x 11 baking dish with cooking spray

Cut haddock into about 1 1/2 in chunks and lay in pan. Add shrimp and scallops. Sprinkle with salt and pepper to taste.

Add minced garlic to fish and shrimp

Pour heavy cream over the fish and add Swiss cheese.

Sprinkle with paprika and Parmesan cheese. Bake for about 15-20 minutes being careful to not over bake so the shrimp doesn’t overcook
