Who needs take out when you can make these scrumptious &quot;beefy&quot; vegan burritos at home! Stuffed with a spicy mixture of refried beans and crumbled seitan ... these babies are packed with flavor and great for meal-prep.

"Beefy" Vegan Burritos

Coat the bottom of a large skillet with the oil and place it over medium heat.

When the oil is hot, add the onion. Cook the onion, stirring occasionally, for about 10 minutes, until soft and beginning to brown.

Add the seitan to the skillet and continue cooking everything for about 5 minutes, until the seitan begins to brown.

Stir the garlic, cumin, and ancho chile powder into the skillet. Cook the mixture until the garlic becomes very fragrant, about 1 minute.

Stir in the water and tomato paste. Raise the heat and bring the mixture to a simmer.

Lower the heat and allow the mixture to simmer for about 5 minutes, stirring occasionally, until the sauce thickens up a bit.

Remove the skillet from the burner. Season the mixture with hot sauce, salt and pepper.

Place a tortilla onto the counter. Spoon about 1/2 cup of the seitan mixture and 1/2 cup refried beans into the center. Top with cilantro, and cheese, if using.

Fold the side of the tortilla closest to you over the fillings. Fold the sides inward, then tightly roll the burrito away from you.

Repeat until all of the fillings and tortillas are used.

Serve.

orange juice (fresh squeezed is best)

lime juice (from about 2 limes)

jalapeño, minced, seeds removed for less heat

black pepper

white vinegar

corn or flour tortillas

white onion

chopped cilantro

Vegan Sour Cream

Make the seitan steak, but do not make the marinade with the recipe. Instead, use this carne asada marinade.

In a large ziplock type bag (wash and reuse after to reduce waste), add all marinade ingredients. Alternatively, use a container with a lid.

Once the steaks have steamed, cut them up into slices and add to the bag with the marinade.

Seal and squish the bag around to coat. Let marinate in the refrigerator for at least 2 hours, overnight preferred, in the refrigerator.

Heat a grill pan or cast iron pan over medium-high heat. Place the marinaded seitan steak pieces in the pan, saving the excess marinade. Cook for a few minutes on each side, until a bit blackened. Add a little more marinade right before removing from the pan, for extra flavor.

Remove from heat and serve in corn or flour tortillas with toppings of choice. I like chopped white onion, chopped cilantro and crumbled vegan feta (not traditional, but Violife&#39;s vegan feta reminds me of cotja cheese!) Enjoy!

Easy Seitan

chickpea flour (or all purpose flour)

nutritional yeast

onion powder

thyme

vegan no chicken broth (or vegetable broth)

soy sauce

seasoned rice vinegar

cornstarch

In a large bowl, add the vital wheat gluten, flour, nutritional yeast, onion powder, garlic powder, thyme and salt. Stir well to combine.

Pour the broth and olive oil in the bowl with the dry ingredients, and stir well with a large spoon until the dough starts to pull away from the bowl.

Transfer to a lightly floured surface and knead with your hands for 2-3 minutes. It will be a messy dough.

Tear the dough into bite sized pieces.

Prepare a large pot with a steamer basket with 1-2 inches of water on the bottom. Place the pieces of seitan in the basket and steam for 15 minutes.

If using the honey ginger sauce, add the garlic, ginger, soy sauce, agave, seasoned rice vinegar and cornstarch to a small bowl and whisk to combine.

In a large sauté pan, warm the olive oil over medium heat. Add the steamed seitan pieces and pan fry on each side until golden brown and crispy on the outside.

Lower the heat and pour the sauce over the seitan. Stir constantly until thickened and the seitan is coated in the sauce.

Serve immediately with rice, if desired and perhaps a side of steamed broccoli.

Oh my goodness, this recipe was perfect and came together so quickly.   Served with matchstick carrots in lettuce wraps, we added vegan buffalo sauce for spice.  Thank you Nora for the consistently delicious recipes.

I’m training for a body building competition, so for my meal prep I tripled the recipe, reduced the oil, and used a low cal marinade. It was still incredible.
