Get ready for some EPIC vegan seitan ribs! They&#39;re saucy, succulent, and completely irresistible. From backyard cookouts to weekly meal prep, this is an easy vegan BBQ recipe you&#39;ll return to again and again.Recipe adapted from Susan Voisin&#39;s recipe for Seitan Ribz.

Seitan-Jackfruit Vegan Ribs

Orrington Farms Vegan Beef Flavored Powder (See Notes for a homemade version.)

smoked paprika

garlic powder

unsalted almond butter (I used raw but roasted should be fine.)

maple syrup

liquid smoke

soy sauce

Preheat

Preheat oven to 350 degrees F. Lightly spray a 9x13 casserole dish with oil.

Combine all of the dry ingredients in a large mixing bowl. Whisk very well so that the spices are fully incorporated.

Prepare jackfruit

Drain the can of jackfruit, and place the jackfruit on a lint-free tea towel. Gather up the ends of the towel, and squeeze it over the sink to remove as much brine as possible. Use your hands to separate the seeds and tough pieces from the stringy parts of the jackfruit. The seeds and tough parts can be discarded. Once you have a pile of the meaty, stringy part of the jackfruit, make sure it is well shredded and separated. You should end up with about 1 ⅓ cups of jackfruit.

Combine

Add the shredded jackfruit to the dry ingredients and toss to coat. Set aside.

Saute

Preheat a large saute pan over medium heat. Stirring occasionally, cook the onion and mushrooms until dry, about 7 minutes. Add minced garlic to the pan and cook for another minute. Remove from heat.

Blend

In a blender combine the sauteed mushroom mixture, ½ cup of the barbecue sauce, water, nut butter, maple syrup, liquid smoke, and soy sauce. Blend until smooth.

Pour the blended mixture into the dry ingredients, and stir to combine. Knead in the bowl for only about 30 seconds, just to make sure everything is fully incorporated. The seitan dough should feel fairly soft.

Bake

Press the dough evenly into the casserole dish, and use a knife to cut into 16 or 20 pieces, depending on how wide you want the ribs to be (refer to photos above). Bake uncovered for 20 minutes. Remove from oven, brush with ½ cup BBQ sauce, and bake for another 25 minutes. Remove from oven, and use a spatula to carefully flip the ribs. Brush with another ½ cup BBQ sauce, and bake for another 10 to 15 minutes or until piping hot and sticky. 

Cool

Allow to rest in the pan for at least 1 hour before serving (this allows the seitan to firm up). Preferably, allow the ribs to cool, then refrigerate overnight and reheat the next day using a grill, stovetop grill pan, or microwave.

These vegan BBQ ribs are the perfect summer grilling recipe! They are tender, succulent, and have a chewy, meaty texture. Packed with protein, this dish is incredibly filling and satisfying.

Vegan BBQ Ribs (seitan ribs)

vital wheat gluten (150 grams)

BBQ sauce (divided)

tahini (*)

soy sauce (or tamari)

liquid smoke ((optional))

Start by preheating oven to 200C/400F. Lightly grease a 7x11 or 8x8 inches baking pan with cooking oil.

Combine all dry ingredients in a large mixing bowl. Mix well.

Then, add in all wet ingredients along with ¼ cup of BBQ sauce and mix until a dough forms. Knead dough for about 30 seconds to a minute.

Transfer seitan dough to a 7x11 inches or 8x8 inches baking dish. Using your hands, press dough to evenly spread it into the pan. Slice dough into 12-16 pieces, depending on how wide you want the ribs to be.

Bake for 20 minutes, then spread 1/2 cup of BBQ sauce on and bake for another 10 minutes. When the time is up, flip it and spread another 1/2 cup of sauce on the other side. Bake it again for 10-15 minutes until sticky.

Let seitan ribs cool down for at least 30 minutes. Optionally, char it in a grill pan or on the grill for 2-3 minutes on each side before serving.

These are really good.  After cooking I put it under the oven broiler on high for 2-3 minutes per side to get a good char on them.  The helpful tips state that weighing the vital wheat gluten is best but nowhere do I see what the weight should be for the 1.5 C needed  ??

Made these last night and I honestly was so surprised. The recipe was so easy. I was procrastinating making this recipe because it was my first time making seitan. My 16 year old son like them so much and he’s not vegan. I’m making this again tonight. Thank you for an amazing recipe 😊

These are really good, I found it difficult to cut them in the pan and also to flip them.  The second time I made these I used parchment paper, pressed down the dough then lifted it out to cut it, made cutting and flipping very easy and kept the sauce from burning on the sides of the pan. I've also made it without the extra basting sauce, and kept in the refrigerator overnight- to dice and use in fried rice, its very much like smoked ham then.
