Sesame Ginger Dressing Recipe

natural almond (or peanut butter*, (unsweetened/unsalted))

honey

rice vinegar

soy sauce

sesame oil

garlic

ginger

chili pepper sauce (I used Sriracha – optional)

coarse sea salt

Whisk the nut butter: In a small bowl (or jar), whisk the nut butter until smooth.

Finish the dressing: Add the honey, vinegar, soy sauce, toasted sesame oil, garlic, ginger, chili pepper sauce, and salt.

Drizzle and Store: Use it right away or store in a mason jar until ready to use.

Make the dressing by whisking together the following in a medium bowl or shaking in a mason jar: sesame oil, olive oil, soy sauce, rice vinegar, maple syrup, garlic and fresh ginger. If you want a creamier dressing, add in a tablespoon of tahini or cashew butter.

For the dressing:

For the dressing: Combine all ingredients in a jar or resealable container. Shake vigorously to combine. Store in the refrigerator until ready for use.

For the salad: Place the greens in a large bowl; drizzle with half of the dressing.

Arrange the ahi tuna, bell peppers, avocado, cucumber, carrot and wonton strips on top of the lettuce; sprinkle with sesame seeds.

In a small bowl, whisk together the tahini, sesame oil, vinegar, tamari, ginger, maple syrup, and 1 tablespoon water until smooth.

If the dressing is too thick, add an additional 1 to 2 tablespoons water until it’s a drizzleable consistency.

Easy Edamame Quinoa Salad with Sesame Ginger Dressing

quinoa,

vegetable broth

edamame

red bell pepper, diced

red cabbage, thinly sliced

cucumber, diced

salt

tbsp sesame seeds, toasted (optional)

green onions, sliced (optional)

tsp reduced-sodium soy sauce

tsp ginger, freshly grated

½ tsp sesame oil

Cook

the quinoa according to package directions in vegetable broth or water.

Make

the dressing while the quinoa cooks. Mix the seasoned rice vinegar, reduced-sodium soy sauce, ginger and sesame oil in a bowl or jar. Thoroughly whisk or shake to combine.

Massage

the cabbage with 1/4 tsp salt until it starts to soften and wilt. Drain any excess water.

the cooked quinoa, edamame, red pepper, red cabbage, cucumber, and sesame ginger dressing in a large bowl. Mix well. Top with toasted sesame seeds and green onions. Enjoy!
