Here&#039;s a 20-minute recipe for soy ginger noodles that&#039;s delicious, healthy, and quick. It&#039;s chewy soba noodles lightly sautéed with tons of fresh vegetables in a savory-sweet soy ginger sauce. Keep it vegetarian or top it with your favorite protein (chicken, beef, pork, shrimp, tofu, etc.) for a complete meal. It&#039;s a better-than-take-out dish that can be served warm or cold, and leftovers make a tasty lunch!

Soy Ginger Noodles

soba noodles (gluten-free if needed)

cooking oil

onion (thinly sliced)

carrot (thinly sliced)

red bell pepper (thinly sliced)

yellow bell pepper (thinly sliced)

cilantro

green onions

sesame seeds

hoisin sauce (gluten-free if needed)

soy sauce (gluten-free if needed)

ginger

mirin

rice vinegar

sesame oil

garlic (finely minced)

Sriracha (to taste)

Cook noodles

Bring a medium-sized pot of water to a boil. Add the soba noodles and cook for half the recommended cooking time (usually 2 minutes) then drain and rinse well under cold water. You will want them to be firm and a little undercooked as they will cook more in the frying pan.

Make sauce

Stir the sauce ingredients in a small bowl.

Stir fry

Heat the oil in a large frying pan or wok over medium-high heat. Add the onion, carrot, and peppers and stir-fry for 2 minutes.

Warm

Add the partially cooked soba noodles and the sauce to the frying pan with the peppers and toss to coat. Toss gently until the noodles have been reheated and are fully cooked, about 2 minutes. Stir in the cilantro, green onions, and sesame seeds.

Miso Salmon with Sesame Ginger Noodles

sake

white miso paste

brown sugar

salmon fillets,

garlic (finely chopped)

scallions (green onions) (thinly sliced)

olive oil (or neutral light olive oil

soy sauce

black pepper

white sugar

salt

ramen noodles

scallions

fresno chiles, sliced

Bring the sake and mirin to a boil in a medium saucepan over high heat. Boil for 20 seconds to evaporate the alcohol. Turn the heat down to low, add the miso paste, and whisk. When the miso has dissolved completely, turn the heat up to high again and add the sugar, whisking constantly to ensure that the sugar doesn&#039;t burn on the bottom of the pan. Remove from heat once the sugar is fully dissolved. Cool to room temperature.

Pat the salmon fillets thoroughly dry with paper towels. Slather the fish with the miso marinade and place in a non-reactive dish or bowl and cover tightly with plastic wrap. Leave to marinate in the refrigerator for at least 3 hours and up to 3 days.

Preheat oven to 425°F. Line a baking sheet with aluminum foil. Lightly wipe off any excess miso clinging to the fillets, but don&#039;t rinse it off. Place the fish skin-side-down on the pan and transfer to the oven and cook for 8 minutes, then turn the oven to broil and broil for 3-4 minutes until the top of golden/black in spots and is opaque in the center and flakes easily. Flake fish into pieces and pile on top of the noodles. Garnish and serve.

For the Fish

Combine the ginger, garlic, and two-thirds of scallions together in a large bowl.

Heat the oil in a small saucepan over medium high heat for about 2 minutes. Turn the heat off and add the ginger mixture. Let the mixture infuse for 5 minutes before stirring in remaining scallions. Stir in soy sauce, rice wine vinegar, pepper, sesame oil, and sugar; season with salt. Set aside for 15 minutes to let flavors come together. Taste and adjust seasonings.

Meanwhile, cook noodles according to package directions. Drain and toss with as much or as little scallion sauce as you&#039;d like in bowl. Top with flakes of salmon and assorted garnishes.

For the Noodles

One of the quickest weeknight meals that really packs some flavor!! Also doubles as excellent leftovers!

So good and so easy! My kids are 7 and 4 and they love it, too! &lt;3

I made this tonight and it came together beautifully and quickly! I didn't have ramen noodles so I used Udon instead.  I also topped the noodles off with a fried egg for some protein and added some sliced jalapenos for heat! YUM!

The flavors were very good but it was very oily. I think it would be better with a thicker soy sauce based sauce rather than oil.

So quick, so easy. Making this again tonight, second time in a week!
