This noodle salad is a perfect light dinner or lunch. It can be made ahead and is very refreshing. These soba noodles are also great to take to potlucks or to eat outside enjoying the sunny summer evening.

Cook the noodles, toss in oil to keep them from getting sticky. Chop the veggies, mix the dressing, toss with noodles, and done! Change up the veggies, add some tofu or edamame, change up the dressing with some peanut butter for a peanut dressing for variations. Chill the dressing for a bit so the ginger can infuse the dressing as well as get slightly pickled in the lime + vinegar to take the raw edge off.

COLD SOBA NOODLE SALAD WITH SESAME GINGER DRESSING | Vegan Richa Recipes

This easy Soba Noodles Recipe is healthy and simple. Loaded with tender vegetables, clean addicting flavor and succulent texture.  Keep it vegan or add your favorite protein.

Soba Noodle Recipe

soba noodles

cabbage,

shiitake mushrooms, sliced thin

carrot

garlic, roughly chopped

1-inch knob of ginger, minced

bell pepper, sliced in thin strips

green onions,

sesame seeds, toasted

black sesame seeds

toasted sesame oil

rice vinegar

soy sauce, Braggs Liquid Aminos, or Smoked Shoyu

Bring water to a boil and cook the soba noodles according to the package directions, (just slightly on the al dente side).  Drain in cool water to remove starchiness. (This helps the texture and prevents the soba noodles from getting gummy and gluey).*See notes for more cooking tips.

Stir together the Soba Noodle Sauce ingredients: sesame oil, rice vinegar, maple syrup, soy sauce.

Stir fry. Heat oil over medium-high heat in a wok or skillet.  Add napa cabbage, shiitake mushrooms, carrot strips, and a sprinkle of salt.  Stir constantly for 2-3 minutes.  Stir in garlic and ginger for 1-2 minutes.  Add bell pepper and white part of the green onion stir-frying for 2-3 minutes until just tender but still crisp.

Add the soba noodles and sauce.  Toss together 1-2 minutes letting it thoroughly heat through.

Sprinkle with sesame seeds and green onions.  Add black sesame seeds for garnish if desired.

Really nice recipe! I used lo mein as I couldn’t get soba at the store this time. It is so easy to make and full of flavor! Love it, thank you!! 😍

Easy, fast, and delicious. Will double next time.

My new favorite noodle recipe! I love it ands I love how easy it is to put together. I have 4 kids so I need something quick but yummy and good for them and sometimes that’s hard to do!
Thank you

I forget to say that I added hoisin sauce at the end. Super yummy!! Thanks

Another great recipe! I love how the sauce isn't overwhelming in volume or taste. I'd double the veggies next time.

Great recipe, I've made it twice in a week. I'm a slow chopper and slicer, so prep took closer to an hour.

Such a tasty and healthy meal! I topped this with your Sesame Ginger Baked Tofu, which was a perfect addition. I omitted the carrots and increased the shiitakes to 4 oz and cabbage to 2.5 cups. Next time I will add even more of both. Bravo!

I can't comment on the rest of the recipe but I made the soba noodle sauce (sub 2tbsp NSA syrup for 1tbsp maple syrup b/c I'm diabetic). It was wonderful with cooked buckwheat soba noodles and various stir fried veg! It's already in my recipe book 😉

One of my favorite go to's as the weather warms up. I swap out whatever veggies we have on hand and am never sad about it!

I made this and put a fried egg on it. It was delicious. I will make this again. I really like soba noodles.

The sauce is a bit bland for my taste. I used low sodium soy. But even with some additional salt, the ginger and garlic, the sauce lacked flavor.

A lot of chopping initially but soon got into the swing of it. No cabbage so I used courgette. Wonderful result and I can already see numerous variations.
Keep the recipes coming. Loved it. Thank you

Been looking for a noodle recipe that I'm happy with. This is it. Absolutely delicious 😋. So quick and easy too.

Delicious! Even leftovers (served cold) were delicious! We added baby bok choy, baked teriyaki tofu, and more shiitakes. YUM YUM YUM Will most definitely repeat. Thank you.

Another delicious recipe!! I often use whatever veggies I have on hand and it still turns out great! I haven’t found a recipe of yours that I don’t like; everything is really really good. Feasting At Home is my go to for the majority of meals 🙏🏼❤️

Excellent! Didn’t change a thing except added crispy baked teriyaki tofu which another reviewer suggested. This will be on our regular rotation. Thank you for an amazing recipe!

This is a go-to recipe for our family. It's healthy and fun to eat. We add a soy sauce and sesame oil dipping sauce so we can 'play with our food,' though we were all told not to as kids! It's a fun, healthy, and delicious meal for everyone.
