This Sha Cha Chicken recipe is another win for lazy cooks––just 9 ingredients and 10 minutes are required to make this stir-fry, but the results are no less impressive.

Sha Cha Chicken

boneless skinless chicken breast ((thinly sliced; can also substitute boneless skinless chicken thighs))

soy sauce

cornstarch

Vegetable oil

ginger

garlic

Sha Cha Sauce

sugar

scallions

In a medium bowl, add the sliced chicken breast, 1 teaspoon soy sauce, 2 teaspoons cornstarch and 1 tablespoon vegetable oil. Mix well. Heat your wok over high heat until smoking. Add 2 tablespoons vegetable oil, and sear the chicken until it just turns opaque (it can still be slightly pink). Remove the chicken from the wok and set aside.

Reduce the heat to medium, and add another couple tablespoons of oil to the wok. Add the ginger and cook for 1 minute. Add the garlic, sha cha sauce, and sugar, and fry this mixture for 2 minutes.

Then add the chicken back to the wok along with the scallions and the remaining tablespoon of soy sauce. Increase the heat to high, and stir-fry for 1 minute, until the scallions are wilted. Serve immediately with steamed rice!

Sha cha chicken recipe

1.25 lb chicken breasts (thin sliced)

½ tsp coarse sea salt

garlic powder

½ tsp baking soda

olive oil

tbsp coconut aminos

tsp tapioca starch (or arrowroot starch)

garlic clove (finely minced, 4 large cloves)

yellow onion (thinly sliced)

Red Fresno or serrano chili peppers (seeds removed and diced)

green bell pepper (diced)

coarse sea salt

tbsp avocado oil

tbsp shacha sauce (homemade,

tbsp aged balsamic vinegar

⅛ tsp white pepper

water

tsp starch

Slice

Thin slice chicken into about ¼ and ⅛ inch thin pieces. Add the seasonings from salt to starch, mix well, and set aside in the fridge.

Prepare

Prepare the garlic, onion, and peppers. Combine the sauce in a bowl ready to use.

Sear

In a well-heated large skillet, when hot, add 1.5 tbsp oil. Sear the chicken in a single layer over medium-high heat without disturbing them until they are in golden brown color, about 2-3 minutes, then use a spatula with a firm tip to flip and sear the flip side, about 1-2 minutes. The chicken should be almost cooked through before setting them aside along with the pan juice and oil in the skillet.

Saute

Use the same skillet, and add 1.5 tbsp cooking fat. Saute the garlic and onion over medium heat for 15 seconds. Add the peppers and salt, and saute for 20 seconds.

Stir-fry

Stir the sauce again so that the starch does not sink to the bottom of the bowl. Pour in the sauce and return the chicken to the pan. Give them another quick toss, about 10 seconds, and turn off the heat.

Serve

Transfer the chicken to a large serving plate. Serve hot and I recommend pairing it with a bowl of steamed hot rice!

We made this recipe a few days ago and it was delicious! We couldn't find dried shrimp powder - we are outside of the U.S. so we use shrimp paste instead. The dish comes together quickly and it was so flavorful!  Very good chicken stir-fry. Highly recommend it!

We made it ths shacha chicken the other night after I saw your posting on Facebook. So flavorful and delicious - just what I remembered of this dish. Where I live it's difficult to find sha cha sauce so I really appreciate you found a way for homemade sauce. My husband also loves this dish.  I will be using this sha cha sauce for hot pot and the next one - Sha cha beef!
