sheet pan lasagna

Giada's Crispy Sheet Pan Lasagna

olive oil, divided

salt

lasagna

garlic,

red pepper flake

(5 oz) container baby spinach

ricotta cheese

lb spicy Italian sausage,

red onion, diced

marinara sauce

mozzarella cheese,

Preheat oven to 425°F and grease a 12x17-inch baking sheet with 1 tablespoon of the olive oil. Set aside.

In a medium skillet over medium heat, heat 1 tablespoon olive oil along with the garlic and pepper flakes. Cook until fragrant, stirring often, about 1 minute.

Add spinach and salt and cook, again stirring often, until the spinach is mostly wilted, about 1 more minute.

Remove spinach to a colander and press out any excess liquid. Remove spinach to a bowl and using kitchen scissors, cut spinach into small pieces. Add ricotta and stir to combine. Set aside.

Wipe out skillet and set over medium heat. Add remaining olive oil, then add sausage and brown undisturbed until the first side has browned, about 3 minutes. Using a wooden spoon, break apart the sausage into bite-sized pieces. Continue cooking, stirring frequently and breaking apart the meat as needed, until sausage is cooked through and lightly brown, about 5 minutes more.

Add onion to skillet and cook until starting to soften, 3 minutes more. Remove from heat.

While sausage cooks, bring a large pot of salted water to a boil over high heat. Cook pasta 1-2 minutes less than package directions indicate, stirring often. Drain and reserve 1/2 cup pasta water.

While pasta cooks, add marinara to the sausage mixture. Add pasta water, drained pasta, 1 cup of the mozzarella, and 1/2 cup parmesan, and stir to combine.

Spread mixture on prepared baking sheet, then dollop with the ricotta mixture. Sprinkle with remaining mozzarella and parmesan and bake until pasta is tender, sauce is bubbly, and top is lightly browned, about 30 minutes.

Let rest 5 minutes before slicing and serving. Enjoy!

Sheet Pan Lasagna

olive oil (divided)

garlic

red pepper

baby spinach (roughly chopped)

salt (divided,

beef

onion (diced)

Italian seasoning

lasagna sheets

25-ounce jar marinara sauce

½ cups shredded low moisture mozzarella (divided)

cheese (divided)

Preheat the oven to 400°F. Oil a 12 x 17-inch baking sheet with 2 tablespoons olive oil. Set aside.

Heat a large deep skillet over medium heat. Add 1 tablespoon oil along with the garlic and pepper flakes. Cook, stirring often until fragrant, about 1 minute. Add the spinach and ½ teaspoon salt and cook, stirring often, until the spinach is wilted, another minute. Remove the spinach mixture to a strainer and press firmly to remove any excess liquid. Place the spinach in a medium bowl. Add the ricotta cheese and stir to combine. Set aside.

Using a paper towel, wipe the skillet and bring it back to medium heat. Add the remaining 1 tablespoon oil along with the ground beef and cook, stirring often and breaking apart as needed, until the beef is lightly browned, another 5 minutes. Add the onion, italian seasoning and remaining ½ teaspoon salt and cook until the onion is fragrant and beginning to soften, 3 more minutes. Remove from the heat.

Meanwhile, bring a large pot of salted water to a boil over high heat. Cook the pasta al dente, stirring often to avoid clumping. Drain well, reserving 1 ½ cup of pasta water.

While the pasta is cooking, add the marinara to the pan with the beef and onion and mix well. Add the pasta water, pasta, half the mozzarella and parmesan cheese and stir to combine.

Spread the entire mixture on the prepared 12 x 17-inch baking sheet. Dollop the ricotta-spinach mixture, and sprinkle with remaining shredded cheeses. Bake until the pasta is tender, the sauce is bubbly, and the top is lightly browned, about 30 minutes. Remove from the oven and let rest for 5 minutes before cutting into squares and serving.

Another great recipe! Not layering the lasagna, just mixing it all up and dolloping the ricotta mixture on top made this recipe super easy. My co-worker told me about your website, and you do not disappoint!

Made this recipe tonight for the first time. Super yummy. I cannot wait to make it for a bigger group.

Preheat the oven to 400˚F (200˚C). Place the garlic bulbs cut-side up in a small oven-safe baking dish and drizzle with the olive oil. Cover the dish tightly with aluminum foil and roast for 40 minutes, until the cloves are fragrant, soft, and deep golden brown. Remove from the oven and allow to cool slightly before handling.

Holding each garlic bulb with the cut side facing away from you, squeeze firmly to release the roasted cloves. Repeat with the remaining bulbs. Reserve the cloves and ¼ cup of the roasted garlic oil from the baking dish.

Reduce the oven temperature to 375˚F (190˚C).

Heat a large skillet over medium-high heat. Add the spicy Italian sausage and cook, breaking it into small crumbles with a wooden spoon, for 6–8 minutes, until browned and cooked through. Remove the skillet from the heat and set aside.

Make the garlic marinara sauce: Transfer half of the roasted garlic cloves to a medium bowl. Add the marinara sauce, Italian seasoning, red pepper flakes, and salt. Use an immersion blender to blend until the roasted garlic is smooth and evenly incorporated into the sauce. Alternatively, mash the garlic very finely with a fork before stirring in the remaining ingredients.

Make the garlic ricotta filling: In a medium bowl, mash the remaining roasted garlic cloves with a fork until smooth. Add the ricotta, ½ cup of the Parmesan, the egg, parsley, and salt. Stir until well combined and evenly creamy. Set aside.

Using a pastry brush, evenly coat the bottom and sides of a 13 x 18-inch rimmed baking sheet with the reserved roasted garlic olive oil. Spread ¾ cup of the garlic marinara evenly over the bottom of the pan.

Arrange a single layer of lasagna noodles over the sauce, breaking them as needed to fit. Spread half of the garlic ricotta filling evenly over the noodles, followed by half of the cooked sausage. Sprinkle with 1½ cups of the mozzarella, then spoon 1 cup of the garlic marinara sauce over the cheese.

Repeat with another layer of lasagna noodles, the remaining garlic ricotta filling, the remaining sausage, 1½ cups of the mozzarella, and 1 cup of the garlic marinara sauce.

Arrange the remaining lasagna noodles over the top. Spread the remaining garlic marinara evenly over the noodles, making sure they are completely covered. Sprinkle with the remaining 1 ½ cups of mozzarella and the remaining ½ cup of Parmesan.

Lightly coat one side of a sheet of aluminum foil with nonstick cooking spray. Cover the sheet pan tightly with the foil, sprayed-side down, and bake for 20 minutes. Remove the foil and continue baking for 15 minutes, until the cheese is melted, browned in spots, and bubbling around the edges.

Let the lasagna rest for 10 minutes before slicing. Garnish with the fresh basil.
