This shrimp scampi pasta makes for the perfect weeknight dinner! Shrimp drenched in a lemony white wine sauce and nestled in al dente linguine.

Shrimp Scampi with Linguine

oz linguine

unsalted butter

shrimp

garlic

tsp red pepper flakes (more

white wine

lemon juice

salt (to taste)

black pepper (to taste)

parsley (chopped)

parmesan cheese (grated)

In a 6 quart stockpot, cook linguine in salted water to package directions. Drain and set aside.

While pasta cooks, melt butter in a skillet over medium heat. Add garlic, red pepper flakes, and raw shrimp. Stirring occasionally, cook until shrimp are pink and cooked through, about 2-3 minutes.

Pour in white wine and lemon juice in to the skillet with the shrimp, then season with salt and pepper. Bring to a simmer, then remove from heat.

Stir in pasta cooked pasta and sprinkle top with sprinkle top with parmesan and parsley.

Serve immediately.

Sweet Lemon Shrimp Scampi Linguine

Lane's Sweet Lemon Pepper Rub

Cup Chicken broth or White wine

Parsley

tsp Red pepper flake

In a bowl add 1 tbsp olive oil, 1 tbsp Sweet Lemon Pepper rub, and 1 tsp minced garlic. Add shrimp, toss, and place in refrigerator for an hour.

Cook the linguine per the package instructions

Over medium heat add shrimp and mixture in a skillet. Cook about a minute per side - the shrimp should be pink. Be careful not to burn garlic or shrimp.

Remove shrimp and place in a bowl, but leave as much of the mixture as you can in the skillet. Add red pepper flake and grate 1 tsp minced garlic to the skillet and cook for 1 minute. Add the juice of a lemon and chicken broth cook for about 2 - 3 minutes - reducing by half. Add half a stick of butter, and a tsp Sweet Lemon Pepper rub and fully incorporate and let it thicken the mixture up a bit, around 5 minutes.

Add shrimp to the mixture, toss, and cook for a minute or two. Add pasta to your serving dish, shrimp with mixture, parsley, and enjoy.
