Best Kale Salad Recipe with a Twist!

kale (with stems removed)

parsnip (sliced thin)

carrot (sliced thin)

red onion (sliced thin)

tbsp red wine vinegar

olive oil

salt

black pepper

oregano

tsp minced garlic (or 1 large clove minced)

dried cranberries

oz feta cheese

Grab a bunch of the kale and slice it into thin ribbons. Add the cut kale to a large bowl.&nbsp;

Slice the parsnip, carrot and onion as thin as possible and add them to the bowl.&nbsp;

In a small bowl add the vinegar, salt, pepper, oregano, garlic, and dried cranberries. Whisk and mash the cranberries a bit letting them flavor the dressing.&nbsp;

Pour the dressing over the kale and veggies. Toss everything together making sure to coat all the leaves with the dressing.

Cover and let sit in the fridge for at least 2 hours. Once you’re ready to eat add the feta and toss.

Simple Kale Salad

kale

red cabbage

honeycrisp apple

ginger,

Dijon mustard

apple cider vinegar

honey

extra virgin olive oil

sea salt

pepper

Prepare the dressing by adding finely grated fresh ginger, mustard, apple cider vinegar, honey, olive oil, and sea salt and pepper to taste to a sealable jar and shake to combine.

Destem the kale and cut it into fine stripes. Then wash and spin dry.

Finely slice red cabbage. Then wash and spin dry.

Add kale and cabbage to a large salad bowl and pour dressing over it, then use your clean hands to massage the dressing into the leaves. Tossing with spoons won&#39;t do the trick. Really massage the leaves in between your fingers.

Core the apple and cut it into thin strips and add it to the rest of the salad and give it one last mix.

Quick and Easy...even with substitutes: green instead of red cabbage, ground instead of fresh ginger. Delicious! Next day leftovers are just as good as the first. Thanks.
