Melt-In-Your-Mouth Italian Meatballs

bread crumbs

milk (or beef broth)

beef

onion (finely diced or grated)

garlic (minced)

tsp black pepper

parmesan cheese (preferably real Parmigiano-Reggiano)

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a baking mat.

In a large mixing bowl, add Italian bread crumbs and milk. Combine well and set aside while preparing the other ingredients, for at least 5 minutes.

Add ground beef, onion, garlic, egg, salt, black pepper, parmesan cheese, and parsley into the soaked bread crumb mixture, and mix with your hands until just combined. Do not overmix.

Portion onto the prepared baking sheet (using a cookie or ice cream scoop will make it easier). Wet your hands with water, and roll meatballs into 2&quot; diameter balls.

Bake for about 15-20 minutes, or until the meatballs have reached an internal temperature of 165˚F (74°C). Remove from oven and drain off any excess fat. Serve with your favorite sauce and enjoy!

Beef meatballs in tomato sauce

Put 1 tbsp of the oil into a pan, add the spring onion and cook for about 5 minutes until soft. Remove from the heat and set aside to cool.

Put the beef mince and half the onion into a large bowl. In a small bowl, lightly whisk the egg with a fork, then add to the meat and onion. Season and mix everything together with your hands – you can use a fork but it is more fun using your hands.

Divide the mixture evenly into 8 balls. Sprinkle the flour onto a plate, then roll each meatball in the flour. Chill for 10 minutes.

Heat the remaining oil in a frying pan, add the meatballs and cook for 5 minutes without moving them. Using tongs, carefully turn them over and cook for another 5 minutes.

Mix the tomatoes, cumin and tomato purée and remaining spring onion together, then add to the pan. Cover and cook gently for 25 minutes until the meatballs are cooked.

Easy Italian Meatballs

oz Parmesan cheese, shredded (using the rind, if possible)

Preheat the oven to 375F and line a cookie sheet with a silicone mat.

Add all the ingredients to the bowl of a stand mixer and using the paddle attachment, mix until everything is evenly distributed and mixed well. Alternatively, combine the ingredients in a large bowl and mix using your hands or a wooden spoon.

Use a cookie scoop to evenly portion the meat mixture into balls and place the balls on the prepared cookie sheet. Gently roll each ball in your hand for about 5 seconds, just to create a uniform ball shape and so that the meatballs retain their shape after cooking.

The meatballs are delicious! A thought to make them quicker -   Spread the mixture out on the counter/mat and flatten it to the height of the meatball you want to make. Make it a rectangle.  Then take a pizza cutter and make even cuts vertical and then horizontal making a bunch of little squares.  Then take the squares and roll them into balls.  It goes so fast and they are the same size! (Mostly, if you make the lines even!)

I have made these several times now, and found that using the 90/10 combination is the best otherwise they taste (and look) to greasy and nobody at home will eat them. Also key is to make them small -- to large and they take longer to cook and also makes them drier.

Preheat oven to 450°F. Coat bottom of a 13x9" roasting pan with 2 tablespoons of olive oil, set aside.

In a large bowl add the ground beef, eggs, ricotta, parmesan cheese, breadcrumbs, herbs and seasonings. Mix thoroughly by hand.

By hand or scoop, make 24 to 28 meatballs about the size of a golf ball. Stack them tightly in the baking dish so all sides are touching.

Roast for 20 minutes (internal temp should be 165°F). While roasting heat your favorite spaghetti sauce (or gravy). OPTIONAL: Feel free to simmer cooked meatballs in your favorite spaghetti sauce (or gravy) or serve immediately with sauce spooned over your favorite pasta or in a sub sandwich.

Preheat oven to 350 degrees F. Line two baking sheets with aluminum foil, then set aside.

In a large bowl, whisk together panko breadcrumbs, smoked paprika, chili powder, salt, and pepper.

Add ground beef, ground pork, eggs, olive oil, and garlic to bowl with dry ingredients. Using a spatula (or even just your hands), mix or knead meat into dry ingredients until thoroughly combined.

Scoop out 1-2 tablespoons of meat mixture and work it with your hands. For best results, gently press meat as you roll it into a ball; doing this will help meatballs keep their shape. If there are any seams along meatball surface, pinch them closed, then roll meatball between your hands until smooth. Take about 10-20 seconds for each meatball to ensure they&#039;re rolled correctly. Once finished, place meatballs on prepared baking sheet; it&#039;s okay if meatballs are placed close together, but ensure they&#039;re not touching. Repeat this step until all meat mixture has been used.

Bake meatballs for 15-20 minutes or until cooked through.
