Cacio e pepe is a simple, authentic Italian pasta dish made with just four ingredients in 20 minutes. It's delicious, flavourful and so easy to make. 

Cacio e Pepe

dry pasta (bucatini, spaghetti or linguine)

butter

black pepper

Parmesan (or Pecorino cheese), freshly grated

Bring a large pot of salted water to a boil over medium high heat. Add pasta and cook until just al dente (fully cooked but still firm), about 8 minutes. Turn off the heat and set the pot aside. Do not overcook the pasta.

While the pasta is cooking, melt butter in a shallow saucepan over medium-high heat. Add black pepper and sauté until fragrant, about one minute. Add 1/3 cup of the hot pasta water and stir vigorously to combine. A vigorous whisking emulsifies fat from the butter and pasta water, creating a creamy sauce.

Turn the heat down to low and transfer the hot pasta into the saucepan. Stir in cheese and stir well to combine, about one minute. The melted cheese makes the sauce thicker and more creamy. Add 2-3 tablespoons pasta water and mix well until desired consistency is reached.

Serve immediately on a plate and garnish with extra pepper and cheese if desired.

Instant Pot Spaghetti with Jar Sauce

dried spaghetti (Note 1)

spaghetti sauce

water

salt

Parmesan cheese (to garnish)

Cracked pepper (to garnish)

Parsley (to garnish)

Break spaghetti in half and add to the Instant Pot (stainless steel bowl).

Pour in water to just cover and add salt.

Put the lid on, turn to seal and press the pressure cook button, adjust the timer to 4 minutes (Note 2)

Once the Instant Pot beeps to indicate the spaghetti is cooked, press the quick release button. Once the pot has depressurized, turn the lid and place in holder.

Use oven mits to remove the inner pot and drain spaghetti into a colander

Place the stainless steel pot back into the Instant Pot, press the saute mode and add drained spaghetti.

Pour in spaghetti sauce and stir to combine till heated through

Top with Parmesan cheese, cracked pepper and parsley
