300 milliliters/11fl oz water

lemongrass,

coriander roots, crushed

110 grams/4 ounces fresh galangal, peeled and sliced (available from Asian supermarkets)

tomatoes,

kaffir lime leaves

juice

red chillies, thinly sliced

75 milliliters/3fl oz fish sauce (nam pla),

75 grams/3 ounces palm sugar (available from Asian supermarkets), use brown sugar

prawns,

chicken breasts,

coriander, leaves

lime wedges

Easy Thai green curry

vegetable oil

tbsp Thai green curry paste (according to taste)

tbsp soft dark brown sugar

lemongrass, fat ends bashed with a rolling pin (optional)

grams/1½lb skinless, boneless chicken chicken

lime

coconut milk

good shake of Thai fish sauce soy sauce

coriander,

½–1 lime, juice only

tsp sesame oil (optional)

red chilli flakes (optional)

salt and pepper

tbsp dark soy sauce

tbsp caster sugar

oyster sauce

tsp fish sauce

coriander leaves (optional)

½ red chilli, thinly sliced
