A creamy, chunky fish chowder for a winter's day - proper warm-you-up grub

Smoked haddock & leek chowder

natural (undyed) smoked haddock

milk

olive oil

lardons (diced bacon), bacon

celery

leeks

bay leaves

potatoes

milliliters stock

frozen sweetcorn

carton single cream

tbsp parsley

Lay the haddock in a deep frying pan and pour over the milk. Cover and bring to the boil. Remove from the heat and leave undisturbed for about 5 mins, until the haddock is just cooked. Lift the haddock from the milk, remove the skin and bones and fl ake onto a plate. Reserve the milk for later.

Heat the oil in a large saucepan (preferably non-stick) and gently fry the bacon until starting to brown. Add the celery, leeks, bay leaves and potatoes, and cook for a couple of mins. Pour in the stock and reserved milk. Bring to the simmer and cook for 10 mins.

Add the flaked haddock, sweetcorn and cream. Season with pepper (it shouldn’t need salt) and stir in the parsley. Heat through gently, then serve.

This soup keeps well in the fridge and is easy to freeze

Leek, bacon & potato soup

pack trimmed leek, sliced and well washed

Melt the butter in a large pan, then fry the bacon and onion, stirring until they start to turn golden. Tip in the leeks and potatoes, stir well, then cover and turn down the heat. Cook gently for 5 mins, shaking the pan every now and then to make sure that the mixture doesn’t catch.

Pour in the stock, season well and bring to the boil. Cover and simmer for 20 mins until the vegetables are soft. Leave to cool for a few mins, then blend in a food processor in batches until smooth. Return to the pan, pour in the cream and stir well. Taste and season if necessary. Serve scattered with tasty crisp bacon and eat with toasted or warm crusty bread on the side.

Pour all ingredients into a shaker with ice. Shake well then strain into chilled cocktail glass. Garnish with a light dusting of groud cinnamon and serve.

These strawberries and cream ice lollies are summer on a stick and great fun to make with the kids.

Equipment and preparation: For this recipe, you will need six 100ml/3½fl oz lolly moulds.

100 milliliters/3½fl oz single cream

vanilla pod, seeds only

250 grams/9 ounces strawberries, hulled

grams/1½oz icing sugar

100 grams/3½oz full-fat Greek-style yoghurt

self-raising flour

ground almond

amaretti biscuits

punnet raspberry

Preheat the oven to fan 140C/conventional 160C/gas 3. Butter and base line a loose-bottomed 20cm round cake tin. Put the butter, caster sugar, eggs, flour and ground almonds into a large bowl. Beat using an electric hand whisk until all the ingredients are well blended.

Spread half the cake mixture in the lined tin. Scatter over half of the amaretti biscuits then a third of the raspberries. Very lightly press into the cake mixture.

Dollop dessertspoonfuls of the remaining cake mixture over the amaretti and raspberries and spread evenly. Scatter the remaining amaretti and half the remaining raspberries over the top. Bake for 55-60 minutes, until a skewer inserted into the centre comes out clean.

Cool for 15 minutes in the tin. Run a knife round the edge and turn out. It will keep in a covered container in the fridge for up to 2 days.

To serve, remove from the fridge an hour before serving and lightly dust with icing sugar before bringing to the table. Serve with the remaining raspberries and a little single cream.
