30 Minute Skinny Alfredo Ziti with Broccoli

oz whole wheat ziti (or any pasta you

broccoli florets (1 medium head)

vegan butter (or reg butter if not vegan)

garlic cloves,

vegetarian broth

almond milk

salt

Cook the pasta and broccoli in a large pot of salted water, according to directions on the package until al dente (or just slightly undercooked). Once done, drain pasta and broccoli and set aside for a few minutes while you make the sauce.

In the same pot, melt butter over medium heat. Once butter is melted, add garlic and flour and stir until flour has browned, about one more minutes.&nbsp;

Whisk in broth and almond milk until smooth, bring to a boil then reduce heat to medium low and simmer for 6-8 minutes until sauce thickens up. Season with salt and pepper.

Once mixture thickens, reduce heat to low and whisk in parmesan cheese. Taste and adjust seasonings as necessary (more salt or pepper or whatever spices you like!). Gently stir in the pasta and broccoli. Serve immediately. Makes 4 servings.

Garnish with extra parmesan and parsley. Enjoy!

Instant Pot Skinny Alfredo is just as tasty as my famous Dump &amp; Start recipe only without the heavy cream! Substituting evaporated milk for the heavy cream cuts the calorie and fat content by more than half making this a guilt-free meal!

Instant Pot Skinny Alfredo

chicken broth

evaporated milk

salt and pepper

dry linguine noodles

Place the broth, garlic, salt and pepper into the Instant Pot liner. Break noodles in half and add to the pot. All noodles should be covered with the broth. DO NOT STIR.

Cook on Manual HIGH for 6 minutes. Allow for a 6 min NPR before QR the pressure.&nbsp;Stir the noddles, some may be slightly stuck together, but that is okay. Once you add in the evaporated milk and warm through, all will be well.

Pour the evaporated milk into a SEPARATE BOWL. Temper the milk by adding a scoop of noodles at a time into the milk and stirring. Once about half of the noodles have been mixed with the evaporated milk, dump the milk and noodles back into the Instant Pot.

Turn the Instant Pot onto Saute LOW and gradually stir in the parmesan cheese. Stir until the cheese has melted completely and the sauce has thickened. Enjoy!

Skinny Alfredo Sauce

cornstarch

tbsp 1/3 less fat (light) cream cheese

tsp kosher salt

garlic powder

black pepper

In a medium sauce pan, whisk together almond milk , cornstarch, garlic powder, and kosher salt. Turn heat to high and bring to a slow boil, whisking frequently so cornstarch doesn&#x27;t stick to the bottom of the pan.

Turn heat to low and continue to cook until slightly thickened, about 3-4 minutes.

Whisk in cream cheese, one tablespoon at a time, until melted.

Sprinkle parmesan cheese in slowly, whisking as you go. If you try to add all the cheese in at one time, it might clump together. Once all cheese is added, finish with cracked pepper.

If serving with pasta, add sauce to pasta and cook together for about a minute, to thicken the sauce. Otherwise, take sauce off heat and let cool for about 5-10 minutes to thicken up.
