Grab your skillet, it&#039;s time to make sizzling hot steak fajitas! I have a flavorful marinade that pairs nicely with the colorful mix of sauteed vegetables.

Steak Fajitas

skirt steak (or flank steak, sirloin, flat iron, or hanger steak)

olive oil

soy sauce

jalapeno

garlic

cumin

salt

black pepper

lime zest

lime juice

olive oil (divided)

white onion (¼-inch thick)

½ cup sliced zucchini (¼-inch thick)

brown mushrooms (rinsed, dried, and quartered)

sliced bell pepper (¼-inch thick, red, green and yellow peppers)

cilantro leaves (chopped)

tortillas (flour

Add steak to a large plastic bag or casserole dish.

In a medium bowl whisk together olive oil, soy sauce, jalapeno, garlic, cumin, salt, pepper, and lime zest.

Remove ¼ cup of the marinade and transfer to a small bowl. Whisk in lime juice and set aside.

Pour the remaining marinade over the beef, flip several times to coat. Marinate for 30 minutes, flipping halfway through. The beef can be refrigerated and marinated for up to 24 hours.

Steak Marinade

Heat a large cast iron skillet over medium-high heat.

Add 1 tablespoon of olive oil to the pan. Shake off the excess marinade from the beef, scrape off any garlic and jalapeno to prevent burning then pat dry with a paper towel. Carefully add steak to the hot pan.

Sear without moving the beef until the surface browns, about 2 to 3 minutes. Flip over and cook until the internal temperature reaches 120 to 125ºF (49 to 52ºC) for medium-rare, about 2 to 4 minutes depending on the thickness. Transfer to a cutting board, cover with foil and allow to rest for 10 minutes before slicing.

Add 1 tablespoon of olive oil to the pan. Once hot, add the onions and saute for 1 minute. Add the zucchini, saute for 1 minute. Add mushrooms, saute for 1 minute. Add bell peppers, saute for 2 minutes. Season with ½ teaspoon salt and ¼ teaspoon black pepper, stir to combine. The vegetables should be crisp-tender.

Slice the beef across the grain, on a bias, into thin ¼-inch thick strips.

Add the beef slices on top of the vegetables. Whisk the 1/4 cup of reserved marinade and then pour over the fajitas. Season with salt and pepper as desired.

Garnish with chopped cilantro leaves. Serve the steak fajitas with warmed tortillas and desired toppings.

Make these tender juicy easy skirt steak fajitas that are even better than your favorite Mexican restaurant. Cooked quickly in cast iron to give it a beautiful char and served with sizzling onions and bell peppers and fresh tortillas.

Easy Skirt Steak Fajitas

large red or yellow bell pepper, (sliced)

onion, (sliced)

lime wedges

Fresh chopped cilantro (for garnish)

Combine fajita seasoning, lime juice, 1 tablespoon olive oil, and worcestershire in a large plastic zip bag.  Reserve 1 tablespoon of this mixture in a small jar or baggy, and set aside. Add steak to large baggy, and zip closed. Shake to coat. Marinate in the refrigerator for at least 30 minutes or up to 24 hours.

Add 1 tablespoon olive oil to a large hot skillet over medium heat. Add bell pepper, onion, and reserved marinade. Cook about 2-4 minutes, until tender but not mushy.

Remove veggies to a separate bowl. Set aside.

Raise heat to medium-high.

Place steak in the skillet. Cook for 3-4 minutes on each side.

Remove from heat. Let steak rest for 10 minutes before slicing thinly.

To serve, add veggies and steak back to skillet. Serve with flour or corn tortillas, and your favorite toppings, such as sour cream, cheese, guacamole, pico de gallo, fresh jalapenos, and hot sauce.

We had this tonight and it was delicious! My skirt steak was only at 100 degrees internally after the stated cook time though, so I put it in a 400 degree oven for a bit.  This is going in my “keeper” file!

This recipe was great! I am not a very good cook, but I’m trying new things and learning new tricks.  I didn’t read all of the instructions, so I cut my meat into 1/4” strips before putting it in the bag to marinate (like I do with peppersteak). When I cooked the meat, I dumped the whole bag (including marinade) into skillet. It created a very nice and flavorful sauce that I cooked the meat in and reduced until it was just coating the meat and the meat was well done. It turned out really good
