An authentic Louisiana casserole with Creole spices, veggies, ham and a rich sauce - a one pot-with bite

Cajun chicken gumbo

olive oil

chicken breasts,

onion, chopped

celery sticks, sliced

bay leaves

tbsp plain flour

tsp Cajun spice mix (or

chicken stock (made with 2 stock cubes)

green peppers, deseeded and cut into chunks

spring onions, sliced

parsley

<p>Heat 1 tbsp of the oil in a wide casserole or big frying pan and fry the chicken for a few mins to brown. Tip out onto a plate. Add the onion to the pan with 1 tbsp more oil and fry for 5 mins until almost softened. Add the celery and fry for another 2 mins, then tip out to join the chicken. Add the remaining oil, bay leaves and flour to the pan and cook into a paste. Carry on cooking, stirring constantly (with a splash of water if you need), until golden brown, then stir in the spices for 2 mins.</p>

<p>Gradually stir in the stock until smooth and saucy. Return the chicken and veg to the pan, along with the peppers, cover and simmer gently for 15 mins. Stir in the ham, cover and simmer gently for 10 mins more. Check for seasoning, then serve, sprinkled with the spring onions mixed with the chopped parsley.</p>

oz pudding rice (Or 114 grams)

litre Alpro unsweetened almond milk

cinnamon

tsp Teisseire Gourmet Drops (Syn Free) (Or your own choice of sweetener)

Place everything in a slow cooker.

Place the lid on and cook on low for 3 hours and serve.

Vegan Creamy Coconut Mushroom Lentils (Stove Top and Instant Pot)

(14 grams) of dried porcini mushrooms

onion, finely chopped

garlic,

(200 grams) of dried brown lentils (or can use green)

(720 milliliters) of vegetable broth

cooking oil spray

dried thyme, oregano and parsley

(120 milliliters)of coconut milk

Put all the ingredients in a pitcher and refrigerate for at least 2-4 hours, or overnight.

Great recipe. We make regular lemonade with 4 lemons cut with skin and blended. Place blended lemons in 9 litres of water and 1/2 kilo of sugar. Let it stand over night then use a strainer to fill bottles (glass is best). Feel free to add mint for extra flavour. Enjoy. We can't make enough with my 3 sons. Can do the same with Oranges.
