This slow-cooker beef recipe makes a lovely change from a stir-fry but is just as easy to prepare. 

Equipment and preparation: For this recipe, you will need an electric slow-cooker, at least 3.5 litres/6 pints in capacity. 


Slow cooker Chinese-style beef

500 grams/1lb 2 ounces braising steak, trimmed, cut into 5cm/2in cubes

350 milliliters/12fl oz hot beef stock (made with 1 stock cube)

tbsp dark soy sauce

tsp cornflour

tbsp clear honey

black pepper

Slow cooker massaman curry

500 grams/1lb 2 ounces new potatoes, halved

lamb

tbsp massaman curry paste

coriander,

fresh root ginger, finely grated

400 milliliters/14fl oz can coconut milk

tsp light muscovado sugar

lime, zest and juice

tbsp fish sauce, plus extra to taste

kaffir lime leaves

unsalted

This take on a sloppy joe creates a filling lunch or simple dinner when you want something hearty and comforting to eat. These are usually served in a bun, so feel free to do so if you have them in.

150 grams/5½oz dried yellow split peas

200 grams/7 ounces frozen soya mince

paprika

herbs

tin chopped tomatoes

onion

small–medium carrots (about 160 grams/5¾oz), peeled and diced

red pepper, seeds removed and diced

75 grams/2¾oz barbecue sauce

wholemeal bread

grams/3½oz cheddar, finely grated

salt and black pepper

A leg of lamb is given a Mexican kick with potent spices and chillies. It needs to be prepared a few hours in advance but there's no tricky techniques involved. 

This meal, if served as six portions, provides 646kcal, 64g protein, 19g carbohydrate (of which 12g sugars), 29g fat (of which 11g saturates), 5g fibre and 0.8g salt.
